%3C/p%3E%3Cp%3EGreen%20onions%20and%20a%20fennel%20bulb,%20pre-trimmed.%3C/p%3E%3Cp%3EI%20also%20had%20some%20potatoes%20on%20hand%20(organically%20grown%20but%20sadly,%20not%20local)%20and%20decided%20to%20create%20a%20meal%20based%20on%20a%20combination%20of%20of%20a%20sausage/fennel%20dish%20that%20Steve%20and%20I%20really%20enjoy%20and%20one%20of%20our%20favorite%20chicken%20quarter%20recipes.%3C/p%3E%3Cp%3EThis%20was%20a%20really%20easy%20meal%20to%20prepare.%20%20All%20I%20did%20was%20peel%20(optional)%20and%20chunk%20a%20few%20potatoes,%20trim%20and%20thick-slice%20the%20fennel%20bulb,%20and%20trim%20the%20stems%20and%20ends%20from%20the%20green%20onions,%20then%20season%20them%20with%20chopped%20fresh%20rosemary%20(dried%20is%20fine,%20too)%20kosher%20salt,%20and%20freshly%20ground%20pepper,%20drizzle%20with%20olive%20oil,%20and%20lightly%20toss,%20all%20right%20in%20the%20roasting%20pan.%3C/p%3E%3Cp%3EVeggies%20ready%20%E2%80%93%20now%20to%20rub%20and%20add%20the%20chicken!%3C/p%3E%3Cp%3ENext,%20I%20prepared%20%20a%20variation%20of%20the%20paste/rub%20from%20my%20other%20chicken%20quarter%20recipe,%20combining%20a%20minced%20garlic%20clove,%20chopped%20rosemary,%20kosher%20salt,%20freshly%20ground%20pepper,%20and%20a%20touch%20of%20cumin.%20%20Onto%20the%20chicken%20it%20went%20(this%20is%20a%20hands-on%20operation!)%20as%20I%20nestled%20the%20chicken%20into%20the%20veggies.%20%20Oh,%20I%20also%20added%20a%20bit%20over%20a%201/2%20cup%20of%20chicken%20stock%20before%20putting%20into%20an%20oven%20preheated%20to%20425%20degrees.%3C/p%3E%3Cp%3EReady%20for%20the%20oven!%3C/p%3E%3Cp%3E50%20minutes%20later%20it%20was%20perfect,%20although%20I%20did%20opt%20to%20remove%20the%20chicken%20quarters%20to%20a%20small%20tray%20and%20pop%20them%20under%20the%20broiler%20for%20just%20a%20few%20minutes%20to%20further%20crisp%20up%20the%20skin.%20%20I%20also%20%20drained%20out%20the%20remaining%20liquid%20into%20a%20small%20saucepan%20and%20added%20some%20cornstarch%20to%20thicken%20just%20a%20bit%20before%20adding%20back%20to%20the%20veggies,%20but,%20while%20it%20added%20a%20smoothness,%20it%20is%20not%20necessary%20to%20the%20success%20of%20the%20recipe.%20Neither%20is%20the%20extra%20browning,%20for%20that%20matter,%20but%20to%20each%20his%20or%20her%20own%20taste%20or%20time%20available.%3C/p%3E%3Cp%3EThis%20was%20a%20really%20delightful%20meal,%20made%20all%20the%20better%20by%20the%20chicken%20having%20being%20raised%20right%20here%20in%20Massachusetts%20on%20a%20farm%20that%20raises%20its%20animals%20in%20a%20responsible%20and%20healthy%20manner.%3C/p%3E%3Cp%3EIt%20was%20so%20good%20that%20Steve%20and%20I%20dug%20right%20in%20before%20I%20remembered%20to%20take%20a%20picture%20of%20it%20plated%20for%20this%20blog.%20%20In%20fact,%20I%20did%20not%20remember%20until%20the%20next%20morning,%20but%20you%20can%20get%20the%20picture%20(forgive%20the%20pun)%20from%20this%20lovely%20re-creation:%3C/p%3E%3Cp%3EPlated,%20albeit%20cold%20leftovers%20from%20the%20fridge.%20It%20still%20looks%20(and%20IS)%20delicious!%3C/p%3E%3Cp%3EAnd,%20that%E2%80%99s%20it%20for%20now.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
