Receta Roasted Corn And Bacon Relish

Ingredientes
- 3 x Ears corn (yellow or possibly white), shucked
- 1/4 c. Maple syrup
- 3 slc Bacon, diced small
- 1 lrg Yellow onion, diced small
- 1 tsp Fresh sage, minced
- Â Â Salt and freshly grnd pepper to taste
Direcciones
- Cook corn in boiling water for 4 min. Remove and allow it to cold.
- Over medium fire, grill corn 2 to 3 min, or possibly till lightly brown. Brush with syrup and continue to grill an additional 3 to 4 min, or possibly till syrup begins to caramelize and corn has brown marks. Remove corn from grill and cold.
- With sharp knife, cut kernels off cobs.
- In saute/fry pan or possibly large skillet, cook bacon over medium heat till crisp, about 5 min. Add in onion and cook an additional 4 to 5 min, or possibly till onion is clear. Add in corn and cook 2 min longer. Remove corn mix from heat, add in sage and season with salt and pepper.
- Notes: From ``The Thrill of the Grill,'' by Chris Schlesinger and John Willoughby (Morrow, 1990). Searching for something different to do on the grill, I found this dish, that is served with a pork tenderloin in the book. It's a wonderful summer side dish served at room temperature or possibly cool.
- Fresh sage makes all the difference.
