Receta Salad Soup
Ingredientes
- ½ onion – sliced thin
- 1 ½ inch piece of ginger – chopped
- ½ cup carrots – chopped
- ½ cup of parsley – chopped
- 3 cloves garlic – chopped
- 1 cup of red beans – or your choice
- ½ head of lettuce – sliced thin
- 1 cup of uncooked rice
- 1 ½ tsp. salt
- ½ tsp. red pepper flakes
- 1 tsp. cumin
- ½ tsp. turmeric
- 1 tsp. curry
- 6 – 8 cups of chicken broth
- ½ tsp. chili powder
- 1 tbs. sesame oil
- 2 tbs. olive oil
Direcciones
- Heat a sauce pot with the olive oil and the sesame oil. Add the garlic, onion, carrots and ginger to simmer until the garlic is fragrant and the onion softened.
- Add the broth, beans and seasonings and continue to simmer on low.
- Adjust the seasonings to your taste.
- Prepare the rice as directed while the soup is simmering.
- Add the lettuce to the soup and continue to simmer.
- Place a scoop of rice in a bowl and cover with the soup.
