This is a simple recipe but it is really delicious. What I love about it is that it has enough flavor to make any adult's mouth water, but our kids still say "this is out favorite salmon!" This is flavorful enough to go well with a simple side like brown or white rice, or a simple parmesan and butter pasta. Don't forget to pour the spice infused olive oil from the foil over your salmon and rice or pasta!

  1. In a medium bowl, prepare the marinade by mixing the garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place the salmon fillets in a medium pyrex baking dish, and cover with the marinade. Marinate in the refrigerator for at least 1 hour, turning occasionally.
  2. Preheat oven to 375 F (190 degrees C).
  3. Place the salmon fillets in large pieces of aluminum foil, cover with the marinade, and fold up the sides of the foil to completely seal. Place sealed salmon in the glass dish or on a baking sheet, and bake 35 minutes. Open one of the foils and check the salmon with a fork. If it flakes easily, it is done.
  4. Server over rice or pasta, pouring the extra marinade from the foil over the fish

      I hate salmon, but I must admit that this looks yummy. I will be using this the next time DH has a yearning for fish. I give only 4 as I haven't tried it yet, but will update when I do make it. Oh yeah, and just on principle, because so far, I still hate salmon..lol

        I cooked this tonight... I'm not a big fan of salmon so that's why I gave it a 3.5... the seasoning was really good though. I added more lemon to mine so I could cover up the salmon flavor. I'm not sure my husband liked it much...I think it had too much lemon for him (he hates lemon). Overall it was a good meal though. I paired it with the mushroom al dente, I think that was a good choice.

          We do something like this on the campground grill! I start with spraying the foil with some Pam, then add sliced potatoes and onion, then I lay the Salmon on top of it and add sliced, red, yellow and green pepper, I put a couple of pats of butter on it and some lemon slices coupled with some lemon pepper spice. It is a whole meal in foil and yummy!

            I have not tried to bake a salmon, this could be a good recipe to try it sometime.

              This sounds really good John. Do you think this could be done on the barbecue? Salmon is my favorite food, I always feel like I am getting a special treat when I eat it.

                Should work fine on the BBQ Fawn. Try using indirect heat or cooking over medium with the cover on. The foil should keep the salmon moist. Let me know how it is!

                H i John I have just been disnosed with diabetes this realy sounds great and seems really healthy too i love seafood or most of it anyway I cant wait to try this thanks a bunch grace russell Okc. OK.

                  Sorry to hear about the diabetes, Grace. There are a lot of healthy recipes on the site for you to try. I hope it is type II and you can keep it in check by eating healthy foods.

                      Hi John, I finally tried this recipe and it turned out awesome! I wish i took pictures of it. I served it with some garlic & chilli flakes spaghetti topped with some of the basil & parsley. It was yum and I am definately going to be making this again. Thanks..
