- 1 egg, beaten
- 1 pound ground pork
- 1 cup panko breadcrumbs
- 1 onion, minced
- 2 cloves garlic, minced
- A few tablespoons parsley, minced
- A few tablespoons fresh thyme, minced
- 1 tablespoon Dijon or stone-ground mustard
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon salt
- 1/2 teaspoon pepper
- For the egg wash:
- 1 tablespoon water
- 1 egg, lightly beaten

%3C/p%3E%3Cp%3EI%20had%20my%20first%20sausage%20roll%20(well,%20it%20was%20a%20pasty%20but%20same%20diff)%20when%20Mr.%20Ninj%20and%20I%20took%20a%20trip%20to%20the%20UK%20a%20number%20of%20years%20ago.%20My%20reaction?%3C/p%3E%3Cp%3EWHERE%20THE%20HELL%20HAVE%20YOU%20BEEN%20ALL%20MY%20LIFE?%3C/p%3E%3Cp%3EYeah,%20they%20were%20some%20pretty%20damned%20addictive%20sausage%20rolls.%3C/p%3E%3Cp%3EI%20made%20them%20a%20few%20times%20at%20home%20but%20they%20never%20tasted%20quite%20the%20same,%20which%20meant%20they%20fell%20out%20of%20meal%20rotation.%3C/p%3E%3Cp%3ESo%20thank%20the%20sweet%20baby%20jesus%20that%20I%20have%20a%20copy%20of%20Melissa%20Pasanen's%20and%20Rick%20Gencarelli's%20Cooking%20With%20Shelburne%20Farms%20and%20I%20happened%20to%20pick%20it%20up%20last%20week.%20The%20book%20has%20recipes%20for%20all%20the%20seasons,%20but%20for%20some%20reason%20I%20tend%20to%20gravitate%20toward%20it%20almost%20exclusively%20in%20the%20fall.%3C/p%3E%3Cp%3E(I%20hope%20it's%20not%20simply%20because%20the%20cover%20is%20brown.%20That%20would%20be%20so%20incredibly%20lame%20of%20me.)%3C/p%3E%3Cp%3EIt%20is%20more%20likely%20because%20I%20think%20fall%20is%20the%20perfect%20time%20to%20cook%20what%20I%20think%20of%20as%20the%20best%20Vermont%20foods:%20earthy%20squash,%20crisp%20apples,%20hot%20cheesy%20soups,%20make-the-whole-house-smell-like-a-holiday%20roasting%20meat.%3C/p%3E%3Cp%3EAnd%20there%20is%20a%20whole%20heck%20of%20a%20lot%20of%20all%20of%20that%20in%20Cooking%20With%20Shelburne%20Farms.%3C/p%3E%3Cp%3E(Remember%20the%20apple/turkey/cheddar%20strata?%20Yes,%20yes,%20it's%20a%20really%20crappy%20picture%20but%20it%20is%20also%20an%20amazingly%20good%20dish.)%3C/p%3E%3Cp%3ETherefore,%20being%20very%20fallish,%20I%20cracked%20open%20the%20book%20last%20week%20and%20found%20the%20recipe%20for%20sausage%20rolls.%3C/p%3E%3Cp%3EHoly%20crap,%20peeps:%20They%20are%20wicked,%20wicked%20good.%3C/p%3E%3Cp%3EAnd%20not%20difficult%20to%20make,%20which%20you%20know%20is%20the%20biggest%20criterion%20for%20The%20Ninj%20when%20choosing%20a%20recipe%20(I%20refer%20to%20techniques%20in%20this%20blog%20as%20%22stealthy%22%20but%20--%20let's%20be%20honest%20--%20that's%20really%20a%20cover%20for%20%22not%20a%20lot%20of%20effort%22%20or%20even%20%22downright%20lazy.%22)%20Ever%20squished%20together%20a%20bunch%20of%20ingredients%20to%20make%20a%20meatloaf?%20Or%20rolled%20out%20some%20dough?%20Then%20you%20are%20imminently%20qualified%20to%20make%20sausage%20rolls.%3C/p%3E%3Cp%3EThis%20recipe%20makes%20a%20dozen%20sausage%20rolls,%20so%20you%20will%20have%20leftovers%20(YAY!).%20If%20you%20want%20the%20pastry%20to%20stay%20flaky,%20reheat%20them%20in%20the%20oven%20or%20a%20toaster%20oven%20if%20you%20can.%3C/p%3E%3Cp%3EWhat's%20your%20favorite%20way%20to%20eat%20sausage?%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3ESausage%20Rolls%20(slightly%20adapted%20from%20Cooking%20With%20Shelburne%20Farms)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EThaw%20the%20puff%20pastry%20according%20to%20the%20package%20instructions.%20Preheat%20the%20oven%20to%20400%20degrees.%20Mix%20up%20the%20egg%20wash%20in%20a%20small%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3ECombine%20the%20pork%20and%20the%20next%2010%20ingredients%20(everything%20except%20what's%20listed%20for%20the%20egg%20wash)%20in%20a%20bowl%20and%20blend%20it%20really%20well%20using%20your%20hands%20(a%20spoon%20just%20isn't%20going%20to%20get%20the%20job%20done%20right).%20Divide%20into%20four%20equal%20portions.%3C/p%3E%3Cp%3EUnfold%20one%20sheet%20of%20pastry%20on%20a%20piece%20of%20parchment%20paper%20placed%20on%20your%20work%20surface%20and%20then%20cut%20it%20down%20the%20middle.%20%20Take%20one%20portion%20of%20the%20pork%20mixture%20and%20place%20it%20in%20the%20center%20of%20one%20of%20the%20pieces%20of%20pastry,%20leaving%20about%201%201/2%20inches%20on%20either%20side%20(but%20be%20sure%20to%20get%20it%20all%20the%20way%20to%20the%20top%20and%20bottom%20edges)%20--%20it%20will%20be%20about%202%20inches%20wide.%20Repeat%20with%20the%20other%20piece%20of%20pastry%20on%20your%20work%20surface.%3C/p%3E%3Cp%3EFold%20the%20left%20half%20of%20one%20pastry%20piece%20carefully%20over%20the%20pork%20mixture.%20Next,%20brush%20the%20egg%20wash%20on%20top%20of%20it,%20as%20well%20as%20on%20the%20not-yet-folded%20right%20side%20of%20the%20pastry.%20Fold%20the%20right%20side%20on%20top%20to%20make%20a%20long%20log,%20smoothing%20down%20the%20dough%20to%20seal%20it%20up.%20Repeat%20this%20step%20for%20the%20other%20pastry%20sheet%20on%20your%20work%20surface.%3C/p%3E%3Cp%3ECarefully%20turn%20your%20logs%20over%20so%20the%20seam%20side%20is%20facing%20down.%20Cut%20each%20log%20into%20three%20portions%20and%20place%20them%20on%20a%20baking%20sheet%20lined%20with%20parchment%20paper.%20Once%20on%20the%20sheet,%20cut%202%20slashes%20in%20the%20top%20of%20each%20portion%20for%20venting.%3C/p%3E%3Cp%3ERepeat%20for%20the%20second%20sheet%20of%20puff%20pastry%20and%20remaining%20two%20portions%20of%20pork%20mixture%20--%20you%20will%20end%20up%20with%2012%20sausage%20rolls%20on%20the%20baking%20sheet.%3C/p%3E%3Cp%3EBake%20for%2015%20minutes,%20then%20reduce%20the%20oven%20temperature%20to%20350%20and%20continue%20to%20bake%20until%20the%20pastry%20looks%20puffed%20and%20nicely%20browned%20(this%20took%20about%2010%20minutes%20for%20me).%3C/p%3E%3Cp%3ECool%20slightly%20and%20serve%20with%20mustard.%3C/p%3E){kind=link}
