%3C/p%3E%3Cp%3EHere%20is%20my%20sister%20Hungrier%20Jemma%20and%20her%20fiance%20Steven,%20looking%20very%20pleased%20indeed%20with%20the%20Thai%20Pork%20and%20Sweet%20Potato%20Curry%20I%20greeted%20them%20with,%20when%20they%20came%20down%20to%20visit%20me%20in%20Chichester%20last%20weekend.%20They%20had%20driven%20all%20the%20way%20down%20from%20Norwich.%20Since%20they%20were%20due%20to%20arrive%20in%20the%20late%20evening,%20I%20figured%20they%20would%20want%20some%20dinner%20on%20arrival%20(there's%20a%20reason%20why%20my%20sister%20is%20called%20Hungrier%20Jemma%20after%20all!)%3C/p%3E%3Cp%3EThis%20dish%20is%20not%20overly%20complicated,%20despite%20the%20long-looking%20list%20of%20ingredients%20and%20recipe%20steps.%20The%20cooking%20time%20is%20only%20about%2020%20minutes,%20but%20you%20do%20need%20to%20prep%20well.%3C/p%3E%3Cp%3EYou%20can%20marinade%20your%20pork%20just%20before%20cooking,%20setting%20it%20aside%20as%20you%20go%20to%20chop%20your%20veg%20and%20put%20the%20rice%20on%20etc%20-%20then%20by%20the%20time%20you%20come%20to%20fry%20the%20pork,%20it's%20all%20nicely%20marinaded.%20Personally,%20I%20prefer%20to%20marinade%20meat%20overnight%20where%20possible,%20but%20that%20just%20doesn't%20always%20happen.%3C/p%3E%3Cp%3EWhen%20I%20boil%20the%20water%20for%20the%20rice,%20I%20put%20another%20pan%20on%20to%20boil%20the%20sweet%20potatoes%20as%20well.%20After%20turning%20the%20rice%20down%20to%20a%20simmer,%20I%20finish%20prepping%20my%20veg%20and%20then%20fire%20up%20the%20wok%20to%20start%20frying%20up%20the%20pork%20and%20everything.%20During%20this,%20the%20potatoes%20finish%20cooking%20so%20I%20set%20them%20aside%20to%20cool,%20adding%20them%20into%20the%20wok%20towards%20the%20end.%3C/p%3E%3Cp%3EBy%20the%20time%20you%20have%20cooked%20the%20curry%20through,%20the%20rice%20will%20be%20done%20too.%20And%20even%20if%20it%20bings%20before%20you%20have%20finished%20the%20curry,%20just%20leave%20the%20rice%20off%20the%20heat%20with%20the%20lid%20on.%20Not%20only%20to%20keep%20it%20warm,%20but%20to%20make%20it%20nice%20and%20fluffy%20too%20:-)%3C/p%3E%3Cp%3EPresent%20the%20dish%20to%20your%20guests,%20and%20hopefully%20they%20will%20look%20as%20pleased%20as%20Hungrier%20Jemma%20and%20Steven%20did!%3C/p%3E%3Cp%3ESee,%20you%20can't%20go%20wrong%20really,%20can%20you?%3C/p%3E%3Cp%3EThai%20Pork%20and%20Sweet%20Potato%20Curry%3C/p%3E%3Cp%3EServes%204:%3C/p%3E%3Cp%3E1)%20Mix%20the%20soy%20sauce,%20fish%20sauce,%20honey%20and%20zest%20in%20a%20large%20bowl.%20Add%20the%20pork%20and%20leave%20to%20marinade%20for%20at%20least%2015%20minutes.%3C/p%3E%3Cp%3E2)%20Wash%20and%20drain%20the%20rice.%20Add%20to%20a%20pot%20with%20the%20water%20and%20bring%20to%20the%20boil.%20Turn%20the%20heat%20right%20down,%20cover%20and%20leave%20to%20simmer%20for%2015%20minutes.%20Take%20off%20the%20heat%20and%20set%20aside.%3C/p%3E%3Cp%3E3)%20Gently%20boil%20the%20sweet%20potatoes%20for%20about%2010%20minutes%20until%20just%20done.%20Drain%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3E4)%20Add%20the%20oil%20to%20a%20hot%20wok.%20Fry%20the%20pork%20for%20about%205%20minutes%20to%20brown.%3C/p%3E%3Cp%3E5)%20Mix%20in%20the%20pepper,%20mushrooms,%20spring%20onions%20and%20sweet%20potato,%20tossing%20well.%3C/p%3E%3Cp%3E6)%20Pour%20in%20the%20coconut%20milk%20and%20allow%20it%20to%20come%20to%20the%20boil.%20Turn%20down%20and%20leave%20to%20simmer%20for%20another%205%20minutes.%3C/p%3E%3Cp%3E7)%20Carefully%20stir%20through%20the%20coriander%20and%20mint.%3C/p%3E%3Cp%3E8)%20Take%20the%20wok%20off%20the%20heat,%20then%20spoon%20in%20the%20creme%20fraiche,%20mixing%20well.You%20can%20then%20serve%20with%20the%20steamed%20rice%20on%20the%20side,%20or%20mix%20the%20rice%20through%20the%20curry%20in%20the%20wok%20before%20dishing%20up.%3C/p%3E%3Cp%3EIf%20you%20liked%20this,%20you%20might%20want%20to%20try%20making%20these%20other%20takeaway%20alternatives%20too.%3C/p%3E%3Cp%3EMore%20porky%20recipes%20that%20might%20take%20your%20fancy.%3C/p%3E){kind=link}
