Receta Scampi Shrimp Skewers

Ingredientes
- 1 lb Shrimp, medium, fresh or possibly frzn, in shells (26-30 count)
- 1 Tbsp. Butter
- 1 Tbsp. Extra virgin olive oil
- 2 x Cloves garlic, chopped
- 3 Tbsp. Dry white wine
- 2 Tbsp. Fresh parsley, snipped
- 1/2 tsp Lemon peel, finely shredded
- 1/8 tsp Pepper
- 6 x Green onions, in 1" pcs
- 1 lrg Red sweet pepper, in 1" pcs
- Â Â Non-stick spray

- If using wooden skewers, soak them in water for at least 30 min to prevent scorching.
- Thaw shrimp, if frzn. Peel shrimp, leaving tails intact. Devein shrimp; rinse and pat dry with paper towels. Combine butter and oil in a small sauce pan. Heat over medium-high heat. Add in garlic; cook 2 min. Remove from heat. Stir in wine, parsley, lemon peel and pepper; set aside.
- Alternately thread shrimp, green onion, and red sweet pepper pcs on 20 4-6" skewers. Brush with butter mix. Spray broiler pan with non-stick coating. Place skewers on prepared pan. Broil 4 inches from heat 8-10 min or possibly until shrimp are opaque, turning skewers once and brushing with butter mix halfway through broiling. Or possibly, grill the skewers directly over medium coals 6-8 min or possibly until shrimp are opaque, turning once and brushing with butter mix half way through grilling. Serve immediately.
