  • 1 lb Shrimp, medium, fresh or possibly frzn, in shells (26-30 count)
  • 1 Tbsp. Butter
  • 1 Tbsp. Extra virgin olive oil
  • 2 x Cloves garlic, chopped
  • 3 Tbsp. Dry white wine
  • 2 Tbsp. Fresh parsley, snipped
  • 1/2 tsp Lemon peel, finely shredded
  • 1/8 tsp Pepper
  • 6 x Green onions, in 1" pcs
  • 1 lrg Red sweet pepper, in 1" pcs
  •     Non-stick spray

  1. If using wooden skewers, soak them in water for at least 30 min to prevent scorching.
  2. Thaw shrimp, if frzn. Peel shrimp, leaving tails intact. Devein shrimp; rinse and pat dry with paper towels. Combine butter and oil in a small sauce pan. Heat over medium-high heat. Add in garlic; cook 2 min. Remove from heat. Stir in wine, parsley, lemon peel and pepper; set aside.
  3. Alternately thread shrimp, green onion, and red sweet pepper pcs on 20 4-6" skewers. Brush with butter mix. Spray broiler pan with non-stick coating. Place skewers on prepared pan. Broil 4 inches from heat 8-10 min or possibly until shrimp are opaque, turning skewers once and brushing with butter mix halfway through broiling. Or possibly, grill the skewers directly over medium coals 6-8 min or possibly until shrimp are opaque, turning once and brushing with butter mix half way through grilling. Serve immediately.
  4. Makes 30 servings.
