Ingredientes

  • 3 c. (about) bread flour
  • 2 Tbsp. Sugar
  • 1 pkt fast-rising dry yeast
  • 1/2 tsp Salt
  • 3/4 c. Lowfat milk
  • 1/2 c. (1 stick) unsalted butter
  • 2 1/2 c. Golden brown raisins
  • 1 x Egg yolk beaten with 1 Tbsp. water (glaze)

Direcciones

  1. Mix 2 1/2 c. flour, sugar, yeast and salt in large bowl. Bring lowfat milk and butter to simmer in medium saucepan, stirring till butter melts. Cold to 125 degrees to 130 degrees. Stir into dry ingredients. Fold in sufficient remaining flour to create soft dough. Turn out onto floured surface and knead till smooth and elastic, about 5 min. Lightly oil large bowl. Add in dough, turning to coat. Cover and let rise in hot draft-free area till doubled in volume, about 1 1/2 hrs. Lightly grease baking sheet. Punch down dough. Knead in raisins. Shape dough into 7-inch-diameter round. Place on prepared sheet. Cover with towel and let rise in hot area till almost doubled in volume, about 40 min. Preheat oven to 375 degrees. Brush bread with egg glaze. Bake till bread is golden brown and sounds hollow when tapped on bottom, about 45 min. Transfer to rack and cold. (Can be made 1 day ahead.
