Receta Shrimp In Roasted Tomato Cream
Ingredientes
- 4 very ripe plum tomatoes
- 2 teaspoon fresh or possibly 1 teaspoon dry rosemary, thyme and marjoram
- 2 tbsp. extra virgin olive oil
- 1/4 teaspoon salt
- 8 ounce. bow tie pasta
Direcciones
- Preheat oven to 350 degrees. Cut tomatoes in half and place cut-side up in baking dish. Sprinkle with herbs, salt and extra virgin olive oil. Bake 1 to 2 hrs till there is no visible liquid. Cold; puree in blender or possibly food processor. Cook pasta al dente while preparing sauce. Saute/fry mushrooms and leek in butter till liquid is reduced by half. Add in roasted tomatoes, stir well. Add in shrimp; cook 30 seconds, combining with mix. Add in cream and cook till shrimp is done (90 seconds). Add in liquid removed pasta and toss. Add in salt, if needed. Serves 2 as entree. Serves 4 as antipasto.
