Receta Shrimp Scampi Sandwich...
Ingredientes
- Hummus spread inside the pita: check
- Fresh spinach stuffed on top of hummus: check
- Fresh sprouts piled on top of spinach:
- About a dozen or so shrimp crammed into pocket, er, sandwich: check
- Healthy and delicious: check
- High in protein, low in carbs: check

- For the hummus:
- 1 can (15.5 oz.) white kidney beans, drained and rinsed
- 2 cloves garlic
- 3 tablespoons tahini (available in most grocery stores next to the peanut butter)
- 1/4 cup loosely packed fresh flat-leaf parsley
- zest from one lemon
- juice from one lemon
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 to 1/3 cup extra-virgin olive oil
- For the sandwich:
- 4 pita pockets
- 16 fresh spinach leaves
- 1 package (6 oz.) fresh sprouts (I used broccoli sprouts)
- 48 medium shrimp, cooked, deveined, tails removed, rinsed
