After reading the very informative article, I used your ideas and suggestions and roasted a small ball tip chuck roast. My husband said it was the best ever!!!!
I started with a small roast (1 1/3lb.) and rubbed with coarse salt then put in refrigerator for 2 hours. Then I rubbed with Montreal Steak Seasoning and pan seared it. Mixed hot water and bouillon in pan and placed roast on rack over it. Then roasted at 300 for about 1.5h (until 140 degrees for closer to medium wellness). Let rest and WOW.
