- 1 Tbsp. plain gelatin
- 1/3 c. lime juice
- 1 c. water boiling
- Â Â sugar substitute to equal
- Â Â sugar
- 13 ounce evaporated skimmed lowfat milk
- Â Â cool
- 1/4 c. water cool
- 1 x 4 serv sz vanilla pudding mx
- Â Â instant
- 1 pch lime rind grated (opt.)
- Â Â ready-to-fill crumb crust
- 1 x thin lime slices
- Â Â for garnish optional
- Â Â diet whipped topping mix
- Â Â prepared optional

- In blender container, combine plain gelatin and lime juice. Wait 1 minute, till softened, then add in boiling water. Cover and blend on high speed till all granules are dissolved. Add in sugar substitute, evaporated skim lowfat milk, cool water, pudding mix, and lime rind, if you like. Cover and blend smooth.
- Refrigeratein the refrigerator about 20 min, till mix is partially set. Spoon into prepared pie shell and refrigerateseveral hrs, till hard.
- Pie may be garnished with lime slices, and prepared low-calorie whipped topping, if you like.
- KEY LIME PARFAITS: Omit pie shell from preceding recipe. Prepare filling according to directions. Then, whip 3 egg whites and a healthy pinch of salt till stiff and fold into prepared filling when partially set.
