.%20We%20even%20have%20a%20couple%20anniversaries%20squeezed%20in%20for%20good%20measure.%3C/p%3E%3Cp%3ELast%20weekend%20we%20kicked%20off%20the%20celebrations%20with%20Nana%20and%20Papa%E2%80%99s%2050th%20wedding%20anniversary.%20Fifty%20years!%20The%20whole%20family%20gathered%20from%20across%20the%20nation.%3C/p%3E%3Cp%3EWe%20all%20wrote%20letters%20to%20Nana%20and%20Papa%20sharing%20our%20favorite%20memories%20and%20lessons%20learned%20from%20them.%3C/p%3E%3Cp%3EI%20realized%20that%20one%20of%20the%20big%20things%20I%E2%80%99ve%20learned%20from%20this%20whole%20family%20is%20a%20love%20of%20parties%20and%20hosting.%20They%20take%20such%20joy%20in%20the%20intricacies%20of%20it%20all.%20I%20remember%20Nana%20pulling%20a%20jar%20of%20whole%20vanilla%20beans%20from%20her%20cupboard%20one%20of%20the%20first%20times%20I%20visited%20her%20home,%20and%20we%20spent%20the%20rest%20of%20the%20afternoon%20concocting%20creme%20brulee%20from%20scratch.%3C/p%3E%3Cp%3EPapa%E2%80%99s%20no%20stranger%20in%20the%20kitchen%20either,%20showing%20me%20the%20ropes%20of%20fish%20tacos%20and%20perfectly-crisped%20bacon.%3C/p%3E%3Cp%3ENow%20that%20I%20think%20of%20it,%20he%E2%80%99s%20also%20the%20one%20who%20taught%20me%20how%20to%20pour%20a%20respectable%20drink.%20Seven%20and%20Seven%20is%20his%20cocktail%20of%20choice,%20and%20I%20quickly%20adopted%20it%20for%20myself.%20The%20request%20often%20gets%20me%20funny%20looks%20from%20bartenders,%20who%20undoubtedly%20expect%20me%20to%20demand%20an%20Appletini%20or%20Lemondrop.%3C/p%3E%3Cp%3EEveryone%20at%20the%20gathering%20was%20SO%20familiar,%20which%20seemed%20really%20funny%20to%20me.%20How%20well%20do%20most%20people%20know%20the%20friends%20of%20their%20grandparents-in-law?%20These%20people%20have%20offered%20ongoing%20fellowship,%20present%20at%20our%20weddings%20and%20baby%20showers.%3C/p%3E%3Cp%3EI%E2%80%99ve%20been%20a%20part%20of%20this%20family%20now%20for%20nine%20years,%20and%20what%20strikes%20me%20most%20is%20how%20warm%20and%20welcoming%20everyone%20has%20been%20as%20we%20gather%20old%20and%20new%20faces%20around%20the%20buffet%20table.%20It%E2%80%99s%20funny%20how%20food%20and%20friendship%20can%20be%20so%20intertwined.%3C/p%3E%3Cp%3EWe%20all%20agreed%20not%20to%20give%20Nana%20and%20Papa%20any%20gifts,%20but%20you%20know%20I%E2%80%99m%20a%20big%20rebel%20rule-breaker.%20I%20passed%20along%20my%20new%20favorite%20kitchen%20gadget,%20the%20Veggetti,%20to%20the%20couple%20who%20has%20everything%20they%20could%20possibly%20need.%20I%E2%80%99ll%20admit%20I%20found%20a%20little%20delight%20in%20contributing%20some%20sort%20of%20wisdom%20back%20to%20the%20people%20who%20have%20been%20such%20amazing%20teachers%20and%20hosts%20to%20me%20throughout%20the%20years.%3C/p%3E%3Cp%3EThey%20know%20I%E2%80%99ve%20been%20making%20an%20ongoing%20point%20to%20eat%20healthfully%20and%20have%20even%20tweaked%20a%20few%20family%20favorites%20(gasp!)%20with%20some%20pleasant%20%E2%80%93%20and%20occasionally%20not-so-pleasant%20%E2%80%93%20results.%3C/p%3E%3Cp%3EEveryone%E2%80%99s%20been%20really%20good%20sports%20about%20it,%20only%20rarely%20rolling%20their%20eyes%20when%20I%20insist%20on%20replacing%20canola%20with%20avocado%20oil%20or%20swapping%20out%20their%20beloved%20spaghetti%20in%20favor%20of%20zucchini%20strings.%20I%20always%20rejoice%20when%20my%20recipes%20get%20Nate%E2%80%99s%20stamp%20of%20approval,%20as%20he%E2%80%99s%20by%20FAR%20the%20pickiest%20one%20out%20of%20the%20bunch.%20Fortunately,%20the%20Veggetti%20has%20been%20a%20BIG%20win,%20with%20my%20party%20dishes%20being%20a%20hit%20over%20and%20over%20again.%20I%20concocted%20a%20couple%20new%20crowd-pleasers%20last%20weekend%20and%20promised%20to%20share%20the%20recipes%20with%20Nana%20for%20her%20next%20gathering.%3C/p%3E%3Cp%3EApple%20Carrot%20Latkes%3C/p%3E%3Cp%3E7%20large%20carrots,%20shredded%20thin%20with%20a%20Veggetti%3C/p%3E%3Cp%3E1/2%20large%20gala%20apple,%20minced%3C/p%3E%3Cp%3E4%20Tbsp%20flour%20(I%20used%20Bob%E2%80%99s%20gluten-free)%3C/p%3E%3Cp%3E1/2%20tsp%20baking%20powder%3C/p%3E%3Cp%3E2%20eggs%3C/p%3E%3Cp%3E1/2%20tsp%20coarse%20kosher%20salt%3C/p%3E%3Cp%3EPalm%20shortening%3C/p%3E%3Cp%3EHeat%20palm%20shortening%20over%20high%20heat%20in%20a%20large%20skillet%20%E2%80%93%20use%20enough%20to%20heavily%20coat%20the%20bottom%20of%20the%20pan.%3C/p%3E%3Cp%3ECombine%20remaining%20ingredients,%20making%20sure%20eggs%20are%20thoroughly%20beat%20in.%3C/p%3E%3Cp%3EUsing%20an%20ice%20cream%20scooper,%20scoop%20out%20carrot%20and%20apple%20mixture%20into%20pan%20and%20spread%20to%20about%203%20inches.%3C/p%3E%3Cp%3EFry%20for%20approximately%202%20minutes%20on%20each%20side,%20until%20brown%20and%20crispy.%3C/p%3E%3Cp%3EUse%20a%20slotted%20spatula%20to%20move%20from%20skillet%20to%20paper%20towels,%20let%20sit%20briefly%20before%20serving.%3C/p%3E%3Cp%3ECombine%20zucchini%20with%20kielbasa,%20green%20onions,%20garlic,%20basil,%20red%20pepper%20flakes%20and%20salt.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20large
