  1. In large mixing bowl let egg whites stand at room temperature about 30 min.
  2. Add in vanilla and beat with electric mixer on medium speed till soft peaks form (tips curl).
  3. Add in sugar, 1 Tbsp. at a time, beating on high speed till very stiff peaks form (tips stand straight up).
  4. Mix in mix of crackers, baking pwdr and pecans. Spread in a greased 9" pie plate.
  5. Bake in 325 degree oven for 30 min. Cold on wire rack. Arrange peach slices over meringue.
  6. Whip cream till stiff peaks form. Spread over peaches. Cover and refrigerateovernight.
