- 1 cup white whole wheat flour, fluffed, spooned and leveled
- 1 1/4 cups (157 g) AP flour
- 1 t salt
- 1/2 t baking soda
- 1 cup (2 sticks) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 smallish egg (see note above)
- 1 smallish egg yolk (see note above)
- 1 1/2 t vanilla
- 2 1/2 cups Special K cereal with dried strawberries
- 1/2 cup dried blueberries
- 1/2 cup chopped white chocolate

%20and%20I%20swear%20I%20don%E2%80%99t%20judge%20others%20for%20using%20them,%20but%20since%20I%20enjoy%20making%20many%20things%20from%20scratch%20they%20are%20not%20particularly%20appropriate%20to%20me%20or%20this%20blog.%20However%20one%20%E2%80%9Cprocessed%E2%80%9D%20or%20pre-made%20food%20we%20do%20eat%20is%20(cold)%20breakfast%20cereal,%20so%20when%20Food%20Buzz%20offered%20us%20the%20chance%20to%20try%20Special%20K%E2%80%99s%20new%20strawberry%20cereal%20(regular%20Special%20K%20plus%20dried%20strawberries),%20I%20decided%20to%20try%20it.%3C/p%3E%3Cp%3EWhen%20it%20came%20I%20was%20disappointed%20to%20realize%20that%20for%20a%20cereal%20that%20is%20marketed%20as%20healthy,%20its%20first%20listed%20ingredient%20(the%20one%20there%20is%20most%20of)%20is%20rice,%20with%20sugar%20listed%20third.%20It%E2%80%99s%20great%20that%20whole%20wheat%20is%20inbetween%20those%202,%20but%20that%20still%20makes%20it%20less%20healthy%20then%20anything%20I%20want%20to%20eat%20for%20breakfast%20every%20morning.%20So%20I%20decided%20to%20try%20baking%20with%20it%20instead.%20Eureka!%3C/p%3E%3Cp%3EI%20actually%20think%20this%20makes%20a%20decently%20healthy%20cookie,%20despite%20what%20I%20wrote%20above.%20First%20of%20all%20because%20most%20cookies%20are%20going%20to%20have%20some%20%E2%80%9Cwhite%E2%80%9D%20starch%20in%20them%20anyway%20but%20not%20necessarily%20any%20whole%20grains.%20And%20second,%20because%20with%20the%20sweetness%20of%20the%20cereal%20flakes,%20I%20reduced%20the%20sugar%20from%20what%20I%20would%20normally%20use.%20Keeping%20in%20mind,%20of%20course,%20that%20a%20cookie%20is%20still%20a%20cookie%20and%20not%20the%20healthiest%20thing%20on%20the%20planet%20ever.%20But%20they%20passed%20my%20test%20for%20sending%20in%20to%20Alex%E2%80%99s%20kindergarten%20class%20for%20snacks%E2%80%93which%20turned%20out%20to%20be%20kind%20of%20a%20shame%20because%20I%20really%20wanted%20more%20than%20the%202%20I%20got%20to%20eat.%20I%20could%20have%20eaten%20a%20ton%20of%20these,%20which%20is%20saying%20something%20since%20neither%20white%20chocolate%20nor%20dried%20fruit%20are%20my%20favorite%20things%20in%20cookies.%20I%20might%20actually%20have%20to%20buy%20more%20Special%20K%20and%20keep%20experimenting%20with%20baking%20with%20it.%3C/p%3E%3Cp%3EA%20note%20about%20the%20recipe:%20I%20get%20my%20eggs%20from%20a%20local%20farmer,%20and%20as%20a%20result%20their%20sizes%20can%20vary%20wildly.%20I%20wanted%20to%20use%202%20egg%20yolks%20with%20some%20egg%20white,%20so%20I%20used%20the%202%20smallest%20eggs%20in%20the%20carton.%20If%20all%20you%20can%20get%20is%20large%20eggs,%20I%20would%20use%202%20yolks%20plus%20about%20half%20of%20the%20white%20from%20one%20of%20the%20eggs.%20A%20second%20observation%20is%20that%20while%20you%20should%20feel%20free%20to%20sub%20other%20cereal%20flakes,%20increase%20the%20sugar%20if%20they%20are%20not%20sweetened%E2%80%93and%20let%20me%20know%20how%20they%20turn%20out,%20since%20I%20am%20by%20no%20means%20an%20expert%20on%20baking%20with%20cereal%20flakes!%20Corn,%20for%20example,%20might%20bake%20up%20totally%20differently,%20I%20really%20do%20not%20know.%3C/p%3E%3Cp%3ESpecial%20K%20Berries-n-Cream%20Cookies%3C/p%3E%3Cp%3ERecipe%20inspired%20by%20CookEatShare%20Cookbook%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Whisk%20together%20the%20flours,%20salt%20and%20baking%20soda.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter,%20adding%20the%20sugar%20about%201%20minute%20in.%20Cream%20until%20fluffy%20and%20totally%20blended.%20Add%20the%20egg%20and%20egg%20yolk%20and%20blend.%20Add%20the%20vanilla%20and%20blend.%20Add%20the%20flour%20mix%20and%20mix%20on%20low%20until%20completely%20smooth%20and%20blended.%3C/p%3E%3Cp%3EAdd%20the%20Special%20K%20cereal,%20the%20dried%20blueberries%20and%20the%20white%20chocolate.%20Mix%20on%20low%20until%20evenly%20blended.%20Scoop%20out%20tablespoons%20of%20the%20dough%20onto%20a%20cookie%20sheet%20lined%20with%20silicone%20or%20parchment%20paper.%20Lightly%20press%20the%20scoops%20with%20crisscrossing%20fork%20patterns%20to%20flatten%20a%20bit.%3C/p%3E%3Cp%3EBake%20for%2010-12%20minutes%E2%80%93if%20you%20have%20a%20convection%20oven%20you%20will%20get%20better%20results%20using%20a%20325%20F%20convection%20setting.%20Remove%20when%20the%20cookies%20are%20firm%20and%20lightly%20browning%20at%20the%20edges.%20Let%20cool%20for%205%20minutes%20on%20the%20pan%20and%20then%20move%20to%20a%20cooling%20rack%20to%20cool%20completely.%3C/p%3E){kind=link}
