%3C/p%3E%3Cp%3EI%20still%20remember%20the%20taste%20of%20the%20omelette%20that%20my%20dad%20prepared%20one%20school%20night%20.%20He%20was%20in%20the%20mood%20to%20get%20creative%20I%20guess,%20so%20he%20cracked%20up%20few%20eggs,%20added%20the%20usual%20onions,%20green%20chillies%20,%20salt%20and%20pepper%20and%20cut%20up%20few%20slices%20of%20Tomatoes%20and%20after%20pouring%20the%20entire%20egg%20mixture%20into%20a%20large%20frying%20pan,%20he%20placed%20the%20tomatoes%20on%20top.%20I%20noticed%20that%20he%20cooked%20the%20egg%20very%20slow%20on%20a%20low%20heat%20and%20slowly%20turned%20the%20rather%20huge%20omelette%20with%20one%20quick%20flip%20and%20cooked%20the%20other%20side%20for%20few%20minutes.%20That%20was%20the%20best%20omelette%20that%20I%20can%20ever%20remember,%20Juicy%20and%20slightly%20tangy%20from%20the%20tomatoes%20and%20so%20perfectly%20seasoned.%3C/p%3E%3Cp%3EAnother%20reason%20why%20I%20remember%20it%20well%20is%20because%20the%20omelette%20almost%20looked%20like%20a%20pizza%20with%20toppings%20to%20me%20:-)%20My%20mom%20often%20made%20individual%20omelettes%20for%20our%20breakfast%20(which%20was%20super%20yummy%20btw)%20,%20but%20a%20huge%20omelette%20that%20looked%20like%20a%20pizza%20was%20new%20to%20us%20and%20me%20and%20my%20sis%20loved%20it!%3C/p%3E%3Cp%3EAnother%20'omelette'%20memory%20I%20want%20to%20share%20was%20when%20I%20started%20working%20at%20this%20MNC%20in%20Bangalore,India.%20I%20often%20used%20to%20rush%20out%20of%20my%20hostel%20in%20the%20mornings%20without%20eating%20the%20breakfast%20that%20was%20provided%20to%20catch%20my%20bus%20(Typical!!)%20And%20by%20the%20time%20I%20reach%20office%20I%20would%20be%20starving.%20Now%20our%20office%20had%20some%20beautiful%20canteens%20with%20all%20kinds%20of%20yummy%20food,%20starting%20from%20our%20classic%20simple%20breakfast%20items%20like%20Idly,%20dosa,%20vada%20,%20puri...yumm!!%20to%20international%20style%20food%20which%20was%20omelettes,%20toast%20and%20butter,%20French%20toast%20,%20fruit%20salads%20blah%20blah...oh%20I'm%20hungry%20now!%3C/p%3E%3Cp%3EAnd%20the%20most%20priced%20and%20sought%20after%20breakfast%20item%20was%20the%20Omelette%20%20;-)%20Anyway,%20I%20would%20happily%20wait%20in%20queue%20,%20watching%20the%20theater%20cooking,%20where%20one%20guy%20would%20break%20two%20eggs,%20add%20some%20finely%20chopped%20red%20onions,%20green%20chillies,%20diced%20tomatoes,%20cilantro%20,%20white%20pepper%20and%20salt,%20whip%20it%20up%20nicely%20and%20hand%20it%20over%20to%20the%20guy%20who%20would%20fry%20it%20in%20front%20of%20you.%20And%20to%20watch%20him%20was%20like%20watching%20a%20magic%20show%20or%20something%20like%20that.%20He%20would%20pour%20the%20entire%20egg%20batter%20(lets%20call%20it%20that)%20into%20the%20pan,%20cover%20and%20cook%20it%20for%20few%20minutes%20and%20then%20just%20make%20a%20swishing%20movement%20with%20his%20hand%20and%20the%20entire%20omellete%20would%20just%20flip%20out%20of%20the%20pan%20,%20turn%20around%20and%20land%20in%20the%20pan...I%20mean%20WOW%20,%20could%20you%20envision%20that!%20I%20could%20never%20do%20that%20with%20a%20big%20omelette%20,%20it%20would%20just%20fall%20into%20pieces%20on%20the%20floor%20if%20I%20tried%20that,%20I%20would%20feel%20lucky%20if%20atleast%20a%20small%20piece%20landed%20in%20my%20pan%20:-)%3C/p%3E%3Cp%3EHe%20would%20then%20place%20the%20whole%20omlette%20on%20our%20plate%20and%20I%20would%20happily%20take%20it,%20take%202%20slices%20of%20toast,%20some%20ketchup%20and%20butter%20,%20sometimes%20even%20some%20jam%20,%20fork%20and%20knife%20and%20happily%20gorge%20down%20the%20whole%20thing!%20Bliss!!%3C/p%3E%3Cp%3ENow%20last%20Sunday%20morning%20we%20woke%20up%20at%2010:30am%20or%20something%20and%20I%20wasn't%20in%20the%20mood%20to%20make%20some%20elaborate%20breakfast,%20and%20the%20easiest%20and%20quickest%20option%20was%20an%20Omelette.%20So%20with%20my%20tummy%20grumbling%20away,%20I%20enter%20the%20kitchen%20and%20get%20this%20crazy%20idea%20to%20make%20an%20omelette%20with%20red%20radish%20in%20it.%20I%20had%20a%20whole%20bag%20of%20fresh%20red%20radishes%20and%20was%20planning%20on%20making%20something%20with%20it%20for%20lunch.%20So%20I%20go%20ahead%20and%20repeat%20the%20same%20things%20my%20dad%20did%20and%20instead%20of%20Tomatoes%20,%20I%20added%20Red%20Radishes.%20Aren't%20they%20simply%20pretty!!%20:-)%3C/p%3E%3Cp%3EWell%20actually%20I%20added%20the%20radish%20in%20the%20egg%20batter%20itself,%20herbed%20it%20up%20with%20freshly%20chopped%20Corriander%20leaves%20and%20spiced%20it%20up%20with%20a%20little%20Cumin%20powder,%20Turmeric%20powder%20and%20black%20pepper%20powder.%20Double%20Bliss!%20:-)%3C/p%3E%3Cp%3EOh%20and%20it%20was%20raining%20outside%20that%20day,%20so%20this%20was%20a%20perfect%20lazy%20Sunday%20brunch%20with%20a%20cup%20of%20piping%20hot%20masala%20chai...should%20I%20say%20Bliss%20again??%20:-)%3C/p%3E%3Cp%3EThe%20Omelette%20was%20juicy%20and%20so%20so%20flavorful.%20I%20could%20just%20eat%20it%20like%20that,%20without%20the%20toast%20or%20anything.%20Even%20my%20lil'%20guy%20ate%20up%20a%20few%20mouthfulls%20,%20a%20big%20deal%20in%20his%20case%20:-)%3C/p%3E%3Cp%3EThe%20radishes%20cook%20very%20well%20if%20sliced%20thinly%20and%20they%20add%20a%20mild%20crunch%20and%20a%20mild%20peppery%20flavor.%20The%20cilantro%20elevates%20the%20flavor%20to%20another%20level%20and%20the%20mild%20hint%20of%20spices%20all%20blends%20together%20really%20well%20in%20this%20egg%20preparation.%20This%20recipe%20is%20a%20keeper,%20I%20tell%20you!%3C/p%3E%3Cp%3ESpiced%20Omlette%20with%20Red%20Radishes%20Recipe%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Crack%20the%20egss%20and%20beat%20them%20with%20a%20fork%20or%20a%20whisk%20for%20few%20minutes,%20until%20they%20look%20smooth%20and%20has%20slightly%20increased%20in%20volume.%3C/p%3E%3Cp%3E2.%20Add%20all%20the%20other%20ingredients%20and%20slowly%20mix%20them%20well.%3C/p%3E%3Cp%3E3.%20Heat%20your%20skillet%20or%20non-stick%20pan%20and%20heat%20the%20oil/butter.%3C/p%3E%3Cp%3E4.%20Reduce%20the%20heat%20to%20medium-low%20and%20pour%20the%20egg%20mixture%20and%20cover%20and%20cook%20for%202%20minutes%20or%20until%20the%20omelette%20has%20slightly%20set%20and%20is%20not%20runny.%20(evenly%20space%20out%20the%20radishes%20and%20onions%20if%20you%20like)%3C/p%3E%3Cp%3E5.%20The%20omelette%20would%20have%20puffed%20up%20when%20you%20open%20the%20lid%20and%20then%20gently%20lift%20it%20and%20turn%20it%20to%20the%20other%20side%20and%20again%20cook%20for%201%20minute.%3C/p%3E%3Cp%3E6.%20Serve%20hot%20with%20toast%20!%20:-)%3C/p%3E%3Cp%3EDid%20you%20know%20??%3C/p%3E%3Cp%3E1.%20Even%20with%20just%201%20egg%20you%20can%20make%20a%20thick%20omlette%20if%20you%20whisk%20the%20egg%20well%20,%20incorporating%20some%20air%20into%20it%20and%20then%20cover%20and%20cook%20it.%20(For%20this%20dish%20you%20may%20increase%20the%20number%20of%20eggs%20if%20you%20prefer.%20I%20got%20a%20rather%20thick%20omlette%20which%20was%20more%20than%20enough%20for%20us.%20)%3C/p%3E%3Cp%3E2.%20Cooking%20eggs%20on%20a%20low%20flame%20allows%20it%20to%20cook%20slowly%20and%20evenly,%20almost%20mimicking%20an%20oven%20kind%20of%20heat%20transfer.%20It%20also%20reduces%20the%20egg%20from%20burning%20and%20getting%20brown%20on%20the%20bottom.%3C/p%3E%3Cp%3EA%20perfect%20healthy%20breakfast/brunch%20dish%20,%20don't%20you%20think?%20Have%20a%20great%20day%20guys!%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
