Ingredientes
- 4 c. (about 3 lbs.) ripe peaches, peeled, pitted and chopped
- 1/4 c. fresh lemon juice, strained
- 1 oz. brandy
- 7 1/2 c. sugar
- 1 t. ground cinnamon
- 1/2 t. ground cloves
- 1/2 t. ground allspice

%20strawberries%20and%20make%20jam.%20%20%20That%20didn%E2%80%99t%20happen.%20%20%20I%20felt%20it%20did%20not%20bode%20well%20for%20jam%20season.%3C/p%3E%3Cp%3ETo%20make%20myself%20feel%20better,%20I%20pulled%20some%20frozen%20blueberries%20out%20of%20the%20freezer%20and%20made%20some%20jam.%20%20%20And%20of%20course%20there%20were%20blackberries%20to%20be%20had%20this%20year.%20%20%20(See%20Blackberry%20Port%20Jam%20and%20Blackberry%20Lime%20Jam.)%3C/p%3E%3Cp%3ELast%20year,%20we%20traveled%20to%20Porter%20to%20buy%20peaches%20and%20nectarines.%20%20%20That%20didn%E2%80%99t%20happen%20this%20year%20either.%20%20%20Again,%20I%20was%20worried%20about%20what%20I%20would%20give%20as%20Christmas%20gifts.%3C/p%3E%3Cp%3EBut,%20please%20ask%20what%20I%20did%20this%20past%20weekend.%20%20%20Yep,%20I%20canned%20my%20butt%20off.%3C/p%3E%3Cp%3EOur%20white%20peach%20tree%20came%20through%20with%20over%20fifteen%20pounds%20of%20peaches.%3C/p%3E%3Cp%3EThis%20year%E2%80%99s%20harvest%20of%20white%20peaches.%3C/p%3E%3Cp%3EAnd,%20the%20grapes%20decided%20to%20ripen.%3C/p%3E%3Cp%3EWhy%20did%20this%20all%20occur%20the%20week%20that%20school%20started%20when%20I%20was%20so%20worn%20out%20after%20work?%20%20%20I%20was%20putting%20as%20much%20fruit%20in%20the%20fridge%20as%20possible%20and%20hoping%20what%20was%20still%20on%20the%20tree%20and%20vine%20would%20be%20%20okay.%3C/p%3E%3Cp%3EWhew!%3C/p%3E%3Cp%3EI%20made%20Peach-Rosemary%20Jam%20(hope%20to%20post%20about%20that%20soon%20but%20in%20the%20meantime,%20you%20can%20check%20out%20the%20recipe%20here),%20peach%20marmalade,%20grape-orange%20jam,%20vintage%20grape%20jam,%20some%20grape%20conserve,%20and%20two%20kinds%20of%20spiced%20peach%20jam%20(boozy%20and%20non-boozy).%3C/p%3E%3Cp%3EThis%20Spiced%20Peach%20Jam%20came%20from%20my%20vintage%20Farm%20Journal%20cookbook.%20%20I%20adapted%20it%20just%20a%20bit%20by%20omitting%20the%20pectin%20and%20adding%20some%20brandy.%3C/p%3E%3Cp%3ESpiced%20Peach%20Jam%20with%20Brandy%3C/p%3E%3Cp%3EAdd%20sugar%20and%20spices;%20mix%20well.%20%20%20Place%20over%20high%20heat%20and%20bring%20to%20boil,%20stirring%20often.%20%20%20%20%20Reduce%20heat%20a%20bit%20so%20jam%20is%20lively%20simmering.%20%20%20Stir%20often%20and%20be%20careful%20not%20to%20let%20it%20scorch.%20%20%20%20Cook%20for%20about%2030%20minutes%20or%20until%20mixture%20looks%20%E2%80%9Cjammy.%E2%80%9D%3C/p%3E%3Cp%3EWhen%20you%20deem%20the%20mixture%20ready,%20take%20off%20heat%20and%20skim%20off%20foam%20if%20necessary.%3C/p%3E%3Cp%3ELadle%20into%20hot%20sterilized%20jars%20and%20seal.%20%20%20%20Process%20in%20a%20water%20bath%20for%20ten%20minutes.%3C/p%3E%3Cp%3ELet%20jam%20stand%20for%20two%20weeks%20before%20using.%3C/p%3E%3Cp%3EYield:%20%20%205-6%20half-pint%20jars.%3C/p%3E%3Cp%3EThis%20stuff%20smells%20wonderful%20while%20cooking.%20%20%20It%20made%20our%20kitchen%20smell%20like%20Christmas.%20%20%20%20The%20original%20recipe%20adds%20this%20note:%3C/p%3E%3Cp%3EAdd%20Spiced%20Peach%20Jam%20to%20cream%20cheese%20for%20a%20delightful%20sandwich%20spread.%20%20%20Or%20serve%20as%20a%20relish%20with%20cold%20meats%20such%20as%20ham%20or%20with%20chicken.%3C/p%3E%3Cp%3EHmmm%E2%80%A6.%3C/p%3E%3Cp%3EOh,%20and%20did%20I%20tell%20you%20I%20also%20picked%20a%20five%20gallon%20bucket%20full%20of%20cucumbers%20too.%3C/p%3E%3Cp%3EI%20also%20made%20five%20jars%20of%20Delicious%20Dills%20(also%20from%20this%20same%20vintage%20cookbook).%3C/p%3E%3Cp%3EThat%E2%80%99s%20a%20lot%20of%20jars.%20Whew!%3C/p%3E%3Cp%3EAnd%E2%80%A6.there%20are%20still%20more%20grapes%20to%20pick.%3C/p%3E%3Cp%3EI%20should%20not%20have%20been%20worried.%20%20%20There%20will%20be%20enough%20jam%20and%20jelly%20to%20go%20around%20this%20holiday%20season.%3C/p%3E%3Cp%3EA%20few%20posts%20ago,%20I%20posted%20a%20toad%20stool%20instead%20of%20a%20virtual%20flower%20for%20Abigail.%20%20%20%20Aimee%20(Abby%E2%80%99s%20mom)%20commented%20that%20they%20couldn%E2%80%99t%20believe%20how%20huge%20it%20was.%20%20%20Aimee%20and%20Abby,%20that%20was%20a%20baby%20toad%20stool.%3C/p%3E%3Cp%3EThis%20was%20the%20HUGE%20one.%3C/p%3E%3Cp%3EThis%20was%20the%20view%20from%20the%20top.%3C/p%3E%3Cp%3EHere%20is%20the%20beginning%20of%20a%20fairy%20ring.%3C/p%3E%3Cp%3EGiggles%20and%20hugs!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
