.%20%20The%20cilantro,%20lime,%20cumin%20and%20chili%20pepper%20are%20pretty%20much%20a%20win-win-win-win%20combo%20every%20time%20no%20matter%20how%20you%20prepare%20them.%20%20I%20was%20a%20little%20worried%20this%20would%20even%20be%20too%20spicy%20-%20especially%20as%20I%20sat%20and%20watched%20the%20bright%20red%20chili%20collecting%20in%20the%20little%20pools%20of%20oil%20on%20top%20of%20the%20soup%20as%20simmered.%20%20My%20fears%20were%20unfounded%20though%20-%20it%20ended%20up%20being%20just%20right%20for%20us%20and%20we%20easily%20polished%20off%20a%20whole%20big%20bowl%20each%20(with%202%20servings%20left%20to%20keep%20in%20the%20freezer%20for%20later%20-%20score).%3C/p%3E%3Cp%3EThis%20soup%20could%20not%20be%20easier%20or%20faster%20-%20especially%20if%20you%20already%20have%20pulled%20chicken%20in%20your%20fridge%20or%20freezer.%20%20%20%20Simply%20throw%20some%20chicken,%20stock,%20beans%20and%20seasonings%20together%20and%20in%20about%2015%20minutes%20you%20have%20an%20amazingly%20flavorful%20soup.%20%20Its%20also%20really,%20really%20cheap%20-%20again,%20especially%20if%20you%20are%20using%20homemade%20stock%20and%20are%20savvy%20about%20buying%20your%20spices%20(buy%20in%20bulk,%20and%20often%20Mexican%20or%20Asian%20food%20stores%20have%20them%20for%20much%20cheaper).%20%20You%20can%20dress%20it%20up%20with%20garnishes%20like%20sour%20cream,%20avocado%20and%20tortillas%20but%20even%20without%20all%20that%20this%20soup%20packs%20a%20serious%20punch.%20%20Fast,%20healthy%20and%20cheap%20and%20full%20of%20flavor%20-%20I%20think%20this%20just%20became%20one%20of%20my%20new%20favorite%20standbys.%3C/p%3E%3Cp%3ESpicy%20Chicken%20&%20White%20Bean%20Soup%3C/p%3E%3Cp%3E1/2%20cup%20salsa%20verde%20(Mexican%20tomatillo%20salsa)%20(buy%20the%20little%20cans%20in%20the%20mexican%20foods%20section,%20they%20are%20really%20cheap,%20or%20if%20you%20have%20your%20own%20even%20better)%3C/p%3E%3Cp%3E1%20tbs%20olive%20oil%3C/p%3E%3Cp%3E1%20cup%20coarsely%20chopped%20cilantro,%20plus%20a%20few%20leaves%20to%20garnish%3C/p%3E%3Cp%3Eoptional:%20%20sour%20cream,%20crema,%20or%20yogurt%20for%20garnish%3C/p%3E%3Cp%3ECombine%20chili%20powder,%20cayenne,%20cumin,%20sea%20salt%20and%20oregano%20(hey%20this%20is%20basically%20my%20go-to%20'taco%20seasoning').%20%20Toss%20pulled%20chicken%20in%20the%20spices%20until%20its%20well%20coated.%20%20Lightly%20mash%20half%20of%20the%20beans%20with%20a%20large%20spoon%20or%20potato%20masher.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20the%20bottom%20of%20a%20heavy%20stock%20pot%20over%20med-high%20heat.%20%20Add%20chicken%20and%20lightly%20brown%20(takes%20about%202%20minutes).%20%20%20Add%20chicken%20stock%20and%20bring%20to%20a%20simmer.%3C/p%3E%3Cp%3EAdd%20%20the%20beans%20and%20salsa%20verde%20and%20lime%20juice%20and%20stir%20to%20combine.%20%20Taste%20and%20season%20if%20needed%20or%20add%20water%20if%20it%20seems%20it%20needs%20more%20broth%20or%20if%20the%20spice%20is%20too%20intense%20for%20your%20tastes.%20%20%20%20Let%20simmer%20for%20about%2010%20minutes%20until%20the%20starch%20from%20the%20beans%20makes%20it%20thicken%20slightly%20and%20all%20the%20flavors%20have%20had%20a%20chance%20to%20combine.%20%20Remove%20from%20heat%20and%20stir%20in%20cilantro.%3C/p%3E%3Cp%3EGarnish%20with%20sour%20cream,%20crema%20or%20yogurt%20and%20a%20few%20fresh%20cilantro%20leaves.%20%20Would%20also%20be%20amazingly%20fantastic%20with%20some%20corn%20tortillas%20torn%20up%20and%20tossed%20in,%20or%20even%20with%20some%20polenta%20or%20brown%20rice%20(if%20you%20find%20the%20spiciness%20too%20intense%20for%20your%20tastes%20-%20these%20are%20also%20good%20options%20to%20help%20you%20mellow%20it%20out).%20%20Sliced%20up%20avocado%20would%20be%20amazing%20in%20this%20as%20well.%3C/p%3E%3Cp%3E*I%20often%20have%20pulled%20chicken%20in%20my%20freezer%20from%20when%20I%20make%20chicken%20stock%20(I%20roast%20the%20chicken,%20pull%20the%20meat%20off%20and%20pull%20it%20apart%20-%20easier%20to%20do%20if%20you%20slow%20cook%20it%20but%20not%20hard%20either%20way)%20then%20I%20make%20broth%20with%20the%20carcass.%20%20Obviously%20I%20don't%20always%20have%20this,%20and%20you%20probably%20don't%20either.%20%20In%20that%20case:%20take%20one%20boneless,%20skinless%20chicken%20breast%20and%20place%20it%20in%20a%20small%20sauce%20pan%20of%20boiling%20water%20(you%20can%20season/substitute%20with%20wine,%20beer,%20cayenne%20pepper,%20salt%20or%20just%20about%20anything%20you%20can%20think%20of...for%20this%20I%20added%20some%20cayenne%20pepper%20to%20the%20water).%20%20The%20water%20should%20not%20entirely%20cover%20the%20breast.%20%20Reduce%20heat%20to%20med-low%20and%20simmer%20for%20just%20about%205%20minutes%20(10%20max)%20maybe%20turning%20once%20or%20twice.%20%20Let%20rest%20and%20cool%20a%20bit,%20then%20holding%20the%20breast%20down%20lengthwise%20with%20one%20fork,%20pull%20at%20it%20with%20another%20so%20the%20chicken%20strings%20off.%20%20The%20whole%20process%20should%20only%20take%20like%201
