  • 1 1/2 tsp freshly grnd black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1 tsp chopped garlic
  • 1 Tbsp. chopped onion
  • 1/2 tsp crumbled dry thyme
  • 1/4 tsp salt
  • 1 Tbsp. extra virgin olive oil
  • 2 x salmon steaks (1 lb.) each about 1 inch thick
  • 1 Tbsp. unsalted butter

Direcciones

  1. In a bowl stir together the black pepper, the paprika, the cayenne, the garlic, the onion, the thyme, the salt, and the oil till the mix forms a stiff paste. Pat the paste onto both sides of each salmon steak.
  2. Heat an oiled ridged grill pan over moderately high heat till it is smoking and in it saute/fry the salmon for 3 to 4 min on each side, or possibly till it is cooked through. While the salmon is cooking, in a small skillet cook the butter over moderate heat, swirling the skillet, till it
  3. is dark brown, but don't let it burn. Transfer the salmon to heated plates and pour the butter over it.
