- 1/2 cup thinly sliced shallots
- 1 clove garlic, minced
- 1-10 oz package frozen chopped spinach
- thawed and squeezed dry
- 1 1/2 cups grated sharp cheddar cheese
- 1-9 inch deep dish frozen pie shell
- 4 large eggs, lightly beaten
- 1 1/2 cups evaporated milk, milk or cream
- 3/4 t salt
- 1/8 t cayenne pepper
- pinch of nutmeg
