Receta Spinach, Cheese and Sorrel Pastries, and Souk el Tayeb, Beirut
Ingredientes
- 500g flour, type 00
- 1 tbsp fine salt
- 60 ml olive oil plus more for brushing the edges
- 250-300 ml warm water
- Corn starch
- 1 egg, beaten
- For the filling
- 1/2 onion finely chopped
- 1 clove garlic, crushed
- 400g spinach, washed – leaves roughly chopped, stems finely chopped (you could also use chard)
- 50-100g white Turkish cheese such as Tulum (or use feta)
- 150g sorrel
- 1 teaspoon sumac
