Ingredientes

  • 500g flour, type 00
  • 1 tbsp fine salt
  • 60 ml olive oil plus more for brushing the edges
  • 250-300 ml warm water
  • Corn starch
  • 1 egg, beaten
  • For the filling
  • 1/2 onion finely chopped
  • 1 clove garlic, crushed
  • 400g spinach, washed – leaves roughly chopped, stems finely chopped (you could also use chard)
  • 50-100g white Turkish cheese such as Tulum (or use feta)
  • 150g sorrel
  • 1 teaspoon sumac
