Receta St. Patrick's Day Salmon with Leeks

This recipe was also adapted from Margaret Johnson, a great Irish American author and chef. The flavor of the leeks and salmon together is just amazing. And it's a really easy dish. A complete winner!

  1. Leeks, a popular member of the onion family, are one of the oldest Irish vegetables and combine well with everything from potatoes to fish. Because of their distinctive flavor, leeks have been used most often as a flavoring, but more and more they're turning up on their own, often as a kind of bedding or nest for meat or fish fillets.
  2. Preheat oven to 425°F. In an ovenproof casserole dish large enough to hold all 4 steaks, combine leeks, water, olive oil, and lemon zest. Cover with aluminum foil and bake 20 minutes, stirring once half way through. Remove from oven, push leeks aside, and add steaks to the dish.
  3. Spoon leeks evenly over the fish, season with salt, pepper, and lemon juice. Return to oven and bake, uncovered, until salmon is opaque, about 10 to12 minutes. To serve, divide the leeks onto four plates and top with the salmon steak.

        I love salmon, and have had it cooked many wonderful ways, but this recipe quickly went to the top of my list. Whenever I cook with leek, they're always chopped fairly fine, but the texture of the thicker cut leek was fantastic. These ingredients really added flavor to the salmon without overpowering. I'm asking for this dish for my birthday!

            This was a very delicious and healthy main dish that we enjoyed for dinner on St. Patrick's Day. However, I would eat this any other day for dinner as well. I used dried dill weed instead of fresh dill, and it turned out just fine. I'm sure it would have been much better if I had used fresh, but the grocery store didn't have fresh dill.

              I tried this recipe but used salmon chunks since the fillet here is quite pricey.. it tasted well and good too using 'sibuyas na mura' (young onion sprouts).
