%20The%20UK%20is%20famous%20for%20it's%20pies,%20especially%20steak%20pies%20.%20.%20.%20but%20then%20there%20are%20also%20chicken%20and%20mushroom,%20chicken%20and%20ham,%20pork,%20steak%20and%20mushroom,%20etc.%20All%20very%20tasty%20indeed.%3C/p%3E%3Cp%3ELast%20week%20when%20I%20was%20in%20the%20shops%20I%20spied%20some%20tasty%20looking%20steak%20pies%20which%20looked%20to%20be%20topped%20with%20a%20vegetable%20mash.%20Oh%20my%20but%20they%20did%20look%20good%20.%20.%20.%20but%20with%20a%20price%20tag%20of%20%C2%A32.99%20a%20piece%20(for%20a%20single%20serving%20pie!)%20I%20thought%20to%20myself%20.%20.%20.%20no%20way.%20I%20can%20make%20those%20at%20home%20for%20a%20lot%20less%20than%20that.%20And%20they'll%20probably%20taste%20better%20too!%3C/p%3E%3Cp%3EI%20mean%20.%20.%20.%20how%20hard%20is%20it%20to%20stew%20some%20steak%20and%20make%20some%20pastry??%20Not%20hard%20at%20all.%20Especially%20if%20you%20do%20your%20pastry%20in%20the%20food%20processor,%20or%20you%20could%20even%20cheat%20and%20purchase%20it%20ready%20made%20if%20you%20wanted%20to.%20(DO%20get%20the%20all%20butter%20one%20if%20you%20do%20though.%20It's%20much,%20much%20better.)%3C/p%3E%3Cp%3EI%20thought%20that%20a%20parsnip%20mash%20would%20make%20a%20very%20tasty%20topping%20for%20these%20pies%20and%20I%20had%20a%20bag%20of%20parsnips%20that%20needed%20using%20up.%20Parsnips%20are%20a%20fabulous%20root%20vegetable%20with%20a%20slight%20sweetness,%20which%20goes%20very%20well%20with%20beef%20indeed.%3C/p%3E%3Cp%3EI%20spiced%20the%20mash%20with%20a%20bit%20of%20grainy%20mustard%20and%20left%20it%20a%20bit%20rough,%20both%20for%20texture%20and%20for%20looks.%20Just%20look%20at%20all%20those%20craggy%20browned%20bits.%20I%20just%20love%20taking%20the%20traditional%20and%20jazzing%20it%20up%20with%20a%20special%20twist,%20don't%20you?%20Horseradish%20would%20also%20be%20very%20nice,%20but%20just%20a%20touch%20mind%20you%20.%20.%20.%20instead%20of%20the%20mustard.%3C/p%3E%3Cp%3EOh%20my%20but%20these%20were%20some%20good,%20with%20a%20simple%20vegetable%20on%20the%20side%20and%20lashings%20of%20beef%20gravy%20for%20pouring%20over.%3C/p%3E%3Cp%3EI%20did%20good%20I%20think.%20Nom!%20Nom!%3C/p%3E%3Cp%3E*Steak%20and%20Mushroom%20Pies*%3C/p%3E%3Cp%3Ewith%20a%20Parsnip%20Mash%20topping%3C/p%3E%3Cp%3EMakes%206%3C/p%3E%3Cp%3EDeliciously%20tender%20steak%20pies%20in%20a%20crisp%20crust%20base,%20topped%20with%20a%20lovely%20parsnip%20mash.%20Fabulous!%20(I%20like%20to%20make%20the%20beef%20filling%20the%20day%20before.)%3C/p%3E%3Cp%3EOne%20quantity%20of%20short%20crust%20pastry%3C/p%3E%3Cp%3E(Enough%20to%20line%206%20individual%20pie%20dishes,%20or%20large%20muffin%20cups)%3C/p%3E%3Cp%3EFor%20the%20filling:%3C/p%3E%3Cp%3ECover%20the%20dried%20mushrooms%20in%20boiling%20water%20for%2020%20minutes,%20then%20squeeze%20out,%20reserving%20the%20soaking%20water.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20160*C/350*F/%20gas%20mark%204.%3C/p%3E%3Cp%3EHeat%20half%20of%20the%20oil%20in%20a%20large%20oven/stove%20top%20proof%20casserole.%20Add%20the%20beet%20and%20brown%20it%20really%20well,%20working%20in%20batches%20so%20that%20it%20browns%20instead%20of%20stewing.%20Add%20the%20onions%20to%20the%20pan%20and%20cook,%20stirring%20until%20they%20begin%20to%20soften.%20Add%20the%20remainder%20of%20the%20oil%20and%20add%20the%20fresh%20mushrooms.%20Cook%20and%20stir%20until%20browned.%20Add%20the%20soaked%20mushrooms,%20sizzle%20for%20about%20a%20minute%20longer.%20Sprinkle%20with%20the%20sugar%20and%20flour,%20stirring%20until%20the%20flour%20browns.%20Tip%20the%20meat%20and%20any%20accumulated%20juices%20back%20into%20the%20casserole.%20Pour%20over%20the%20ale,%20stock%20and%20porcini%20soaking%20liquid.%20Season%20to%20taste%20with%20some%20salt%20and%20pepper,%20tuck%20in%20the%20herbs%20and%20cover.%20Place%20in%20the%20oven%20and%20bake%20for%20about%202%20hours%20until%20the%20meat%20is%20very%20tender.%20(At%20this%20point%20I%20remove%20it%20from%20the%20oven.%20Remove%20the%20herb%20stems,%20cool%20to%20room%20temperature%20and%20then%20place%20it%20in%20a%20plastic%20container%20and%20refrigerate%20overnight.%20This%20really%20helps%20to%20develop%20the%20flavours.)%3C/p%3E%3Cp%3EThe%20next%20day%20when%20you%20are%20ready%20to%20proceed,%20peel%20your%20parsnips%20and%20cut%20into%20chunks,%20discarding%20any%20woody%20centres.%20Place%20into%20a%20saucepan%20of%20lightly%20salted%20boiling%20water.%20Cook,%20until%20tender,%20about%20ten%20minutes,%20then%20drain%20really%20well.%20Return%20the%20parsnips%20to%20the%20pot,%20add%20the%20butter,%20milk,%20mustard%20and%20salt%20and%20pepper%20to%20taste.%20Roughly%20mash.%20(you%20want%20some%20chunks%20for%20texture)%20Set%20aside.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20220*C/425*F/%20gas%20mark%207.%20Place%20a%20large%20flat%20baking%20tray%20in%20the%20oven%20to%20heat.%20Roll%20out%20your%20pastry%20and%20cut%20into%20circles%20large%20enough%20to%20line%20your%20pie%20dishes,%20or%20muffin%20cups,%20pleating%20it%20to%20make%20it%20fit.%20Divide%20your%20meat%20filling%20amongst%20the%206%20pastry%20lined%20dishes.%20Top%20each%20with%20an%20equal%20quantity%20of%20mashed%20parsnips.%20Place%20onto%20the%20heated%20baking%20sheet%20in%20the%20oven%20and%20bake%20for%2040%20to%2045%20minutes%20until%20golden%20brown%20on%20top,%20the%20filling%20is%20bubbling%20and%20the%20pastry%20is%20crisped.%3C/p%3E%3Cp%3EI%20like%20to%20serve%20this%20with%20a%20few%20vegetables%20and%20some%20gravy%20for%20pouring.%3C/p%3E%3Cp%3ENote:%20for%20an%20added%20depth%20of%20flavour%20you%20can%20sprinkle%20each%20pie%20with%20just%20a%20bit%20of%20stilton%20cheese%20before%20topping%20with%20the%20parsnip%20mash.%20Delicious!%3C/p%3E%3Cp%3EOver%20in%20The%20Cottage%20today,%20you%20will%20find%20a%20delicious%20Butterscotch%20Pudding!%3C/p%3E){kind=link}
