%20But%20while%20TJ's%20jam%20is%20fine,%20it's%20just%20not%20as%20good%20as%20the%20homemade%20stuff.%3C/p%3E%3Cp%3EPlus,%20we%20had%20so%20much%20fun%20picking%20strawberries%20last%20summer%20(we%20froze%20most%20of%20them%20to%20use%20in%20smoothies%20and%20sauces),%20that%20we%20decided%20to%20increase%20the%20size%20of%20our%20haul%20this%20summer%20and%20expand%20our%20preserving%20efforts%20to%20include%20jam.%3C/p%3E%3Cp%3EDespite%20the%20relatively%20rainy%20weather,%20we've%20found%20enough%20breaks%20in%20the%20gloom%20to%20go%20picking%20at%20two%20of%20our%20favorite%20local%20farms,%20Greig%20Farm%20in%20Redhook%20(if%20you%20have%20kids,%20plan%20to%20leave%20time%20to%20get%20ice%20cream%20and%20pet%20the%20goats%20at%20Gigi's%20Market%20and%20to%20feed%20the%20extremely%20competitive%20koi%20in%20the%20pond%20behind%20Grandiflora)%20and%20Story%20Farms%20in%20Catskill%20and%20have%20picked%20enough%20to%20freeze%20a%20bunch%20AND%20to%20make%20a%20decent%20sized%20batch%20of%20this%20divine%20strawberry%20jam.%3C/p%3E%3Cp%3EIf%20you're%20new%20to%20canning,%20this%20is%20a%20great%20thing%20to%20start%20with%20since%20it's%20fairly%20straightforward%20and%20the%20end%20result%20is%20both%20yummy%20and%20beautiful%20to%20behold.%3C/p%3E%3Cp%3EAlso,%20the%20smell%20that%20will%20fill%20your%20house%20while%20you're%20simmering%20the%20jam%20on%20the%20stove%20is%20nothing%20short%20of%20divine%20-%20so%20sweet%20and%20summery%20it%20almost%20makes%20you%20want%20to%20cry.%20This%20smell%20stands%20in%20stark%20contrast%20to%20the%20intensely%20vinegary%20odor%20that%20pervades%20every%20nook%20and%20cranny%20of%20your%20house%20when%20you%20pickle%20foods%20--%20that%20smell%20will%20also%20make%20you%20want%20to%20cry,%20but%20not%20in%20a%20good%20way...%3C/p%3E%3Cp%3EA%20few%20notes%20before%20you%20begin:%3C/p%3E%3Cp%3EDon't%20skip%20the%20macerating%20step%20if%20possible.%20If%20you%20don't%20have%20time%20to%20let%20them%20sit%20overnight,%20even%20an%20hour%20is%20better%20than%20nothing.%3C/p%3E%3Cp%3EAnd%20don't%20cut%20any%20corners%20on%20your%20fruit%20-%20preserve%20the%20freshest%20and%20best%20berries%20you%20can%20find!%3C/p%3E%3Cp%3EThis%20recipe%20is%20adapted%20from%20a%20few%20sources%20including%20one%20of%20my%20favorite%20books,%20Put%20'Em%20Up%20by%20Sherri%20Brooks%20Vinton%20as%20well%20as%20the%20divine%20strawberry%20vanilla%20jam%20recipe%20in%20Marisa%20McClellan's%20wonderful%20new%20book,%20Food%20in%20Jars:%20Preserving%20in%20Small%20Batches%20Year-Round.%20I%20have%20more%20cookbook%20recommendations,%20info,%20recipes%20and%20links%20to%20great%20resources%20for%20you%20on%20my%20canning%20and%20preserving%20page.%3C/p%3E%3Cp%3EThe%20recipe%20below%20yields%20a%20sweet,%20flavorful,%20beautiful%20red%20jam%20that%20is%20nice%20and%20thick%20(not%20syrupy%20like%20preserves).%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Combine%20the%20strawberries%20and%202%20cups%20of%20the%20sugar%20in%20a%20non-reactive%20pot.%20Let%20the%20mixture%20sit%20at%20room%20temperature%20until%20the%20sugar%20begins%20to%20pull%20the%20liquid%20out%20of%20the%20berries,%20about%2015%20to%2030%20minutes,%20then%20cover%20and%20refrigerate%20over%20night%20(this%20is%20called%20maceration.)%20If%20you%20don't%20have%20time%20to%20wait%20that%20long,%20let%20sit%20for%20an%20hour%20or%20more.%3C/p%3E%3Cp%3E2.%20When%20you're%20ready%20to%20jam%20out,%20prepare%20a%20boiling%20water%20bath%20and%206%20wide%20mouth%20pint%20jars,%20lids%20and%20bands%20(you%20can%20also%20use%20a%20combination%20of%20half-pint%20and%20pint%20jars%20if%20you%20prefer%20-%20we%20canned%20some%20of%20ours%20in%20the%20smaller%20jars%20as%20sometimes%20it's%20nice%20to%20have%20the%20option%20of%20a%20smaller%20jar)%20according%20to%20the%20directions%20outlined%20here.%3C/p%3E%3Cp%3E3.%20Take%20the%20macerated%20berries%20out%20of%20the%20fridge%20and%20put%20them%20and%20the%20rest%20of%20the%20ingredients%20in%20a%20large%20non-reactive%20pot%20(you%20may%20want%20to%20use%20a%20larger%20pot%20than%20you%20think%20you'll%20need%20since%20the%20jam%20is%20going%20to%20boil%20and%20foam%20quite%20a%20bit%20and%20a%20bigger%20pot%20can%20help%20you%20prevent%20boiling%20over%20which%20gets%20VERY%20sticky%20when%20you're%20dealing%20with%20this%20amount%20of%20sugar).%3C/p%3E%3Cp%3E4.%20Bring%20to%20a%20boil%20over%20high%20heat(this%20jam%20will%20foam%20like%20crazy)%20and%20cook%20on%20high%20heat,%20stirring%20regularly%20for%2015%20to%2020%20minutes,%20until%20it%20takes%20on%20a%20thick,%20syrupy%20consistency.%20If%20you%20have%20an%20immersion%20blender,%20use%20it%20at%20this%20point%20to%20puree%20some%20of%20the%20fruit%20to%20whatever%20consistency%20you%20desire.%20If%20not,%20you%20can%20use%20a%20blender%20to%20puree%20about%20a%20third%20of%20the%20jam.%3C/p%3E%3Cp%3E5.%20Let%20the%20jam%20boil%20vigorously%20until%20it%20reaches%20220%20F%20(105%20C).%20If%20you%20don't%20have%20a%20candy%20thermometer,%20you%20can%20judge%20that%20it%20is%20done%20when%20the%20bubbles%20begin%20to%20look%20thick%20and%20syrupy.%20You%20can%20also%20see%20if%20it's%20sheeting%20--%20dip%20a%20spoon%20in%20the%20jam%20then%20hold%20it%20up%20and%20let%20it%20drip%20back%20into%20the%20pot%20-%20if%20the%20drips%20fall%20singly%20and%20seem%20liquidy,%20it%20needs%20to%20cook%20longer.%20But%20if%20the%20drips%20have%20begun%20to%20run%20together%20and%20form%20a%20sheet%20as%20they%20drip,%20you've%20achieved%20your%20set%20and%20can%20stop%20cooking.%3C/p%3E%3Cp%3E6.%20Remove%20the%20pot%20from%20the%20heat%20and%20ladle%20the%20jam%20into%20your%20prepared%20jars.%20Wipe%20the%20rims%20with%20a%20clean,%20wet%20cloth,%20apply%20the%20lids%20and%20rings%20and%20process%20in%20a%20boiling%20water%20bath%20for%2010%20minutes.%20Remove%20from%20the%20boiling%20water%20bath%20with%20your%20jar%20lifter%20and%20set%20in%20a%20draft-free%20place%20on%20a%20towel%20to%20cool.%20Don't%20let%20the%20jars%20touch%20each%20other%20as%20they're%20cooling.%3C/p%3E%3Cp%3E7.%20The%20jars%20should%20begin%20to%20make%20a%20most%20delightful%20pop%20or%20ping%20noise%20ans%20the%20seal%20forms,%20pulling%20the%20centers%20of%20the%20lids%20down%20and%20making%20them%20slightly%20concave.%20Once%20the%20jars%20have%20cooled%20for%2024%20hours,%20you%20can%20check%20the%20seals%20by%20removing%20the%20bands.%20Grasp%20the%20jar%20by%20the%20edge%20of%20the%20lid%20and%20lift%20gently%20an%20inch%20or%20two%20off%20the%20towel-covered%20countertop.%20The%20lid%20should%20hold%20fast.%20If%20it%20does%20not%20hold,%20refrigerate%20the%20jam%20and%20use%20it%20within%20two%20weeks.%20If%20it%20does,%20store%20in%20a%20cool,%20dry%20place%20for%20up%20to%20a%20year.%3C/p%3E){kind=link}
