Ingredientes
- 2 1/2 cups chicken stock
- 1 cup uncooked farro
- 2 red bell peppers, cut in half lengthwise, cored, and seeded
- 2 yellow bell peppers, cut in half lengthwise, cored, and seeded
- 2 orange bell peppers, cut in half lengthwise, cored, and seeded
- 2 tablespoons extra virgin olive oil
- 1 large Vidalia onion, chopped
- 4 cloves garlic, minced
- 1 1/2 pounds ground chicken
- 1 1/2 cups fresh or frozen corn kernels
- 4 Roma tomatoes, chopped
- 1/2 cup roughly chopped basil leaves
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 cup grated Parmesan cheese
- 12 ounces fresh mozzarella cheese, sliced into 12 pieces
