%3C/p%3E%3Cp%3EUp%20first:%20Baked%20Tilapia%20with%20Grilled%20Asparagus%20&%20Wild%20Rice!%3C/p%3E%3Cp%3EYUM!%3C/p%3E%3Cp%3EThe%20tilapia%20was%20my%20second%20mystery%20item%20from%20Costco%20;)%20My%20Mom%20and%20I%20split%20a%20big%20pack%20for%20$5%20each!%20I%E2%80%99ve%20mentioned%20this%20before,%20but%20Costco%20is%20a%20wonderful%20place%20to%20buy%20fresh%20seafood%20if%20you%20live%20in%20the%20Midwest,%20like%20me.%20:)%3C/p%3E%3Cp%3EFeel%20free%20to%20add%20or%20delete%20any%20spices.%20I%20just%20looked%20online%20to%20see%20what%20was%20in%20Old%20Bay%20and%20used%20whatever%20I%20already%20had%20on%20hand%20that%20matched.%20I%20combined%20everything%20in%20a%20seasoning%20shaker%20I%20just%20happen%20to%20own:%3C/p%3E%3Cp%3ENext%20I%20seasoned%20each%20side%20of%20the%20Tilapia%20filets%20with%20the%20mix,%20placed%20them%20in%20a%20non-stick%20sprayed%20oven-safe%20dish,%20and%20topped%20with%20a%20few,%20wee%20pats%20of%20butter.%20Then%20I%20squeezed%20a%20wedge%20of%20lemon%20over%20everything%20and%20put%20it%20in%20the%20oven%20at%20375%20for%2025%20minutes,%20or%20until%20it%20was%20flaky.%3C/p%3E%3Cp%3EMeanwhile,%20I%20cleaned%20up%20some%20asparagus%20and%20fired%20up%20the%20grill.%20Hello!%20Fresh%20asparagus%20+%20grill?%20Totally%20summer!%3C/p%3E%3Cp%3EI%20let%20these%20babies%20char%20and%20rolled%20them%20every%20couple%20minutes,%20until%20they%20were%20done.%3C/p%3E%3Cp%3EFinally,%20I%20took%20some%20help%20from%20Uncle%20Ben%20and%20popped%20a%20Wild%20Rice%20packet%20into%20the%20microwave%20to%20heat%20up.%20Easy!%3C/p%3E%3Cp%3EWhen%20I%20assembled%20my%20plate,%20I%20couldn%E2%80%99t%20help%20but%20smile.%20Easy,%20breezy%20dinner%20for%20an%20easy,%20breezy%20summer%20night.%20Perfect!%3C/p%3E%3Cp%3EI%E2%80%99m%20so%20glad%20I%20simply%20seasoned%20my%20Tilapia%20filets%20instead%20of%20breading%20or%20saut%C3%A9ing%20them%20in%20oil.%20It%20was%20the%20perfect%20amount%20of%20spice,%20and%20I%20could%20taste%20the%20fresh%20fish.%3C/p%3E%3Cp%3EI%20served%20lemon%20wedges%20on%20the%20side%20for%20squeezing%20:)%3C/p%3E%3Cp%3EThe%20grilled%20asparagus%20were%20smokey%20and%20perfectly%20cooked.%20I%20like%20my%20asparagus%20a%20little%20crunchy.%20How%20about%20you?%3C/p%3E%3Cp%3EWild%20rice,%20Ben%E2%80%99s%20request,%20was%20a%20perfect%20side%20dish.%20This%20particular%20product%20didn%E2%80%99t%20have%20a%20lot%20of%20preservatives%20or%20funky%20ingredients.%20Plus,%20it%20was%20ready%20in%2090%20seconds!%3C/p%3E%3Cp%3ENow%E2%80%A6what%20would%20a%20good%20summer%20dinner%20be%20without%20a%20perfectly%20summer%20dessert??%20Nothing!%20That%E2%80%99s%20why%20I%20made%20Grilled%20Pineapple%20with%20Vanilla%20Ice%20Cream%20for%20dessert%20%E2%80%93%20wheeee!!!%3C/p%3E%3Cp%3EI%20just%20grilled%20fresh%20pineapple%20until%20they%20were%20slightly%20charred%20and%20while%20we%20ate,%20I%20put%20them%20in%20a%20gladware%20container%20with%20a%20lid%20so%20they%20could%20steam%20and%20get%20soft.%3C/p%3E%3Cp%3EWhen%20it%20was%20time%20for%20dessert,%20I%20dished%20out%20some%20vanilla%20ice%20cream%20and%20placed%20my%20pineapple%20around%20it.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20think%20you%20need%20me%20to%20describe%20how%20incredible%20this%20was%E2%80%A6cool,%20creamy%20ice%20cream%20+%20sweet,%20smokey%20pineapple%E2%80%A6WOW!%3C/p%3E%3Cp%3EWell%20%E2%80%93%20I%20am%20a%20FULL%20and%20HAPPY%20lady%20:)%20The%20Summer%20Inspired%20Dinner%20Series%20is%20off%20to%20a%20good%20start%20if%20you%20ask%20me!%20Tonight%E2%80%99s%20dinner%20met%20all%20the%20requirements:%20fresh%20ingredients,%20insanely%20easy%20preparation%20and%20TOTALLY%20the%20taste%20of%20summer!%208)%3C/p%3E%3Cp%3EStay%20tuned%20tomorrow%20morning%20for%20a%20fun%20announcement%20%E2%80%93%20until%20then,%20have%20a%20super%20night!%3C/p%3E%3Cp%3EDo%20you%20ever%20cook%20fresh%20fish?%3C/p%3E%3Cp%3EThis%20was%20actually%20my%20first%20time%20cooking%20white%20fish%20and%20it%20seriously%20couldn%E2%80%99t%20have%20been%20easier%E2%80%A6it%20was%20actually%20easier%20than%20cooking%20chicken%20because%20you%20don%E2%80%99t%20have%20to%20trim%20it,%20you%20can%20tell%20when%20it%E2%80%99s%20done,%20etc.%20Loved%20it!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
