Receta Summer vegetable lasagne
Ingredientes
- 1tbsp oil
- 1 small onion, diced
- 100g asparagus, cut into ½cm slices
- 50g sugarsnap peas, cut into ½cm slices
- 4 cloves garlic, minced
- 100g mushrooms, cut into 1cm dice
- 125g cherry tomatoes, quartered
- 125g sweetcorn kernels
- For the sauce:
- 2tbsp butter
- 2tbsp plain flour
- 300ml milk
- ¼tsp ground nutmeg
- Salt
- Black pepper
- 50g cheddar cheese, grated
- To construct the lasagne:
- 150g no-boil lasagne sheets
- 100g mozzarella, grated (I actually used a mozzarella / cheddar mix)
- 1 large tomato, sliced
- Fresh parsley, chopped, to serve
