- 1-4 T ghee
- 2 t dark mustard seeds
- 4 t cumin seeds
- 20-25 fresh or frozen curry leaves
- salt to taste
- 2 t paprika/cayenne
- 1 small onion, finely chopped
- 6 cloves garlic, minced
- 28 oz diced tomatoes, canned is fine
- 1/2 cup packed dark brown sugar (or jaggery)
- 1/2 cup chopped cilantro
