%20muffin,%20my%20husband%20came%20up%20with%20the%20perfect%20idea:%20Noodle%20Kugel!%20A%20kugel%20is%20a%20Jewish%20pudding%20of%20sorts,%20usually%20made%20with%20potatoes%20or%20egg%20noodles.%20Sometimes%20savory%20and%20sometimes%20sweet,%20there%20are%20many%20variations%20of%20kugel,%20but%20my%20favorite%20is%20the%20sweet%20variety....and%20both%20the%20sweet%20potato%20and%20the%20honey%20are%20natural%20additions%20for%20a%20sweet,%20noodle%20kugel.%3C/p%3E%3Cp%3EI%20was%20running%20short%20on%20time,%20so%20I%20took%20a%20shortcut%20and%20bought%20these%20frozen%20sweet%20potatoes.%20Notice%20how%20they%20are%20already%20cubed--this%20was%20almost%20too%20easy.%3C/p%3E%3Cp%3ESweet%20Potato%20and%20Honey%20Noodle%20Kugel%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.;%20coat%20a%201%201/2%20qt.%20casserole%20dish%20with%20cooking%20spray.%3C/p%3E%3Cp%3ECombine%20the%20sweet%20potatoes%20and%20the%20honey%20in%20a%20small%20saucepan.%20Heat%20over%20medium%20heat%20for%208-10%20minutes,%20or%20until%20the%20sweet%20potatoes%20are%20just%20fork%20tender.%20Remove%20from%20heat%20and%20cool%20slightly.%3C/p%3E%3Cp%3EIt%20couldn't%20be%20easier%20to%20combine%20the%20sweet%20potatoes%20and%20the%20honey--just%20cook%20for%20a%20few%20minutes%20or%20until%20the%20sweet%20potatoes%20are%20tender.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20the%20cooled%20sweet%20potatoes%20with%20the%20sour%20cream,%20eggs,%20vanilla,%20and%201%20teaspoon%20cinnamon;%20stir%20in%20the%20egg%20noodles.%20Pour%20the%20noodle%20mixture%20into%20the%20prepared%20casserole%20dish.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20the%20cornflakes,%20melted%20butter,%20sugar%20and%201/2%20teaspoon%20cinnamon.%20Spread%20the%20cornflakes%20mixture%20evenly%20over%20the%20noodles.%20Bake%20for%2040-45%20minutes%20or%20until%20the%20kugel%20is%20set%20and%20the%20cornflakes%20are%20browned.%20Serve%20warm%20or%20cold.%3C/p%3E%3Cp%3ESpray%20your%20measuring%20cup%20with%20some%20cooking%20spray%20before%20you%20add%20the%20honey--it%20will%20slide%20right%20out!%3C/p%3E%3Cp%3EIt's%20hard%20not%20to%20eat%20the%20cornflakes%20off%20of%20the%20top.%20They%20are%20buttery%20and%20sugary--like%20candy!%3C/p%3E%3Cp%3ENotice%20the%20beautiful%20sweet%20potatoes%20peeking%20through....%3C/p%3E%3Cp%3EIs%20is%20it%20a%20dessert?%20A%20side?%20A%20meal?%3C/p%3E%3Cp%3EHow%20do%20you%20like%20your%20kugel?%3C/p%3E%3Cp%3ENow%20check%20out%20the%20other%20Sweet%20Potato%20and%20Honey%20creations.....%3C/p%3E){kind=link}
