- 2 ounces grated Parmesan cheese, about 1 cup
- 2 ounces cooked country ham, finely chopped
- 1 egg yolk
- Salt, to taste
- Freshly ground black pepper, to taste
- Freshly grated whole nutmeg, to taste
- For the pasta:
- 1 cup all purpose flour, more if needed
- 3/4 cup semolina flour
- Pinch of salt
- 3 large eggs
- 2 heaping tablespoons minced flat leaf parsley
- 1 tablespoon olive oil
- For the sauce:
- 8 tablespoons (1 stick) good quality salted butter
- 8 fresh sage leaves
- Salt, to taste
- Freshly ground black pepper, to taste
- ¼ cup toasted pecans, finely chopped
