%20to%20say%20he%20had%20cleaned%20out%20my%20pantry%20and%20was%20starting%20on%20the%20refrigerator...the%20boy%20does%20not%20realize%20he%20has%20just%20put%20himself%20in%20harm's%20way.%20%20He%20thinks%20he's%20helping%20me,...he%20thinks%20he's%20doing%20me%20a%20favor%20...%20but%20he%20could%20not%20be%20more%20wrong.%3C/p%3E%3Cp%3EThe%20boy%20sent%20this%20picture%20to%20me%20-%20this%20is%20just%20SOME%20of%20the%20stuff%20he%20said%20had%20%22expired%22...whatever...As%20if%20JIF%20Peanut%20Butter%20HAS%20an%20expiration%20date!%20%20The%20thought%20of%20him%20man-handling%20my%20cupcake%20liner%20or%20tossing%20the%20bottle%20of%20apple-cider%20syrup%20because%20it%20only%20has%20two%20tablespoons%20left%20makes%20my%20blood%20boil!%20%20I%20have%20pretty%20much%20had%20a%20%22hands-off%22%20policy%20when%20it%20comes%20to%20the%20boy,%20thinking%20he%20was%20pretty%20much%20perfect...but%20now%20I%20can%20see%20that%20I%20have%20been%20too%20soft...too%20kind...too%20permissive...and%20I've%20done%20him%20a%20huge%20disservice...when%20I%20get%20home%20the%20boy%20and%20I%20are%20going%20to%20have%20a%20little%20Come%20To%20Jesus%20talk...NO%20ONE%20TOUCHES%20MY%20PANTRY...NO%20ONE!%3C/p%3E%3Cp%3EI%20came%20across%20a%20recipe%20for%20Red%20Velvet%20Cheesecake%20Cookies%20on%20Pinterest%20-%20and%20they%20held%20my%20interest...so%20I%20set%20about%20to%20make%20them%20for%20a%20little%20soiree%20my%20sister%20was%20having%20but%20I%20was%20unable%20to%20find%20a%20Red%20Velvet%20Cake%20mix%20which%20the%20recipe%20called%20for.%20%20Since%20Red%20Velvet%20cake%20is%20basically%20a%20chocolate%20cake%20with%20a%20lof%20of%20red%20food%20coloring,%20I%20used%20a%20Duncan%20Hines%20Swiss%20Chocolate%20Cake%20Mix%20instead...as%20far%20as%20mixes%20go,%20this%20is%20one%20of%20the%20best!%20%20If%20you%20want%20the%20original%20recipe,%20you%20can%20find%20it%20at%20Two%20Peas%20and%20Their%20Pod%20(thanks%20Maria%20and%20Josh%20and%20Pinterest!)%3C/p%3E%3Cp%3EMaria%20and%20Josh's%20recipe%20makes%20ten%20HUGE%20cookies,%20I%20made%20mine%20smaller%20and%20ended%20up%20with%2024%20five-inch%20cookies%20and%20they%20are%20incredibly%20good!!%20%20The%20tops%20of%20the%20cookies%20are%20drizzled%20with%20melted%20white%20chocolate,%20and%20they%20are%20crispy-chewy...but%20the%20middle%20of%20the%20cookie%20holds%20a%20surprise%20-%20creamy%20cheesecake-like%20filling%20that%20takes%20this%20cookie%20to%20a%20whole%20'nuther%20level!%20%20My%20sister%20is%20going%20to%20love%20these%20as%20much%20as%20me!%3C/p%3E%3Cp%3ESwiss%20Chocolate%20Cheesecake%20Cookies%20-%20Inspired%20by%20and%20Adappted%20From%20Two%20Peas%20and%20Their%20Pod's%20Red%20Velvet%20Cheesecake%20Cookies%3C/p%3E%3Cp%3EFor%20the%20cookies:%3C/p%3E%3Cp%3ETo%20make%20cookies:%20%20In%20the%20bowl%20of%20an%20electric%20mixer,%20combine%20cake%20mix%20and%20flour%20on%20low%20speed,%20just%20until%20mixed.%20%20Add%20eggs,%20oil%20and%20vanilla%20extract%20and%20mix%20just%20until%20combined.%20%20Dough%20will%20be%20thick.%20%20Remove%20dough%20and%20wrap%20in%20plastic%20wrap.%20%20Refrigerate%20dough%20for%20at%20least%20one%20hour%20or%20up%20to%20overnight.%3C/p%3E%3Cp%3ETo%20make%20the%20cheesecake%20filling:%20%20Using%20a%20mixer,%20combine%20cream%20cheese,%20powdered%20sugar,%20and%20vanilla%20extract.%20Mix%20until%20smooth.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20To%20assemble%20the%20cookies,%20take%20about%20a%20walnut-sized%20piece%20of%20dough%20and%20roll%20into%20ball,%20then%20flatten%20out%20into%20a%20circle,%20about%202-inches%20in%20diameter.%20%20In%20the%20center%20of%20the%20dough,%20place%20about%201/2%20teaspoon%20of%20filling.%20%20Take%20another%20walnut-sized%20piece%20of%20dough%20and%20flatten%20out%20into%20a%20circle;%20%20cover%20the%20filling%20with%20this%20piece,%20and%20pinch%20the%20edges%20together%20with%20the%20bottom%20piece%20of%20dough%20so%20the%20filling%20is%20encased%20inside.%20%20%20The%20cookies%20will%20spread%20so%20leave%20two%20inches%20between%20each%20cookie.%20%20I%20was%20only%20able%20to%20get%2012%20cookies%20on%20one%20cookie%20sheet.%20%20Repeat%20the%20process%20until%20the%20cookie%20sheet%20is%20filled,%20then%20bake%20for%2011%20to%2013%20minutes,%20or%20until%20the%20tops%20are%20%22crackled.%22%20%20%20Let%20the%20cookies%20cool%20on%20the%20baking%20sheet%20for%205%20minutes%20then%20remove%20to%20a%20wire%20cooling%20rack%20and%20cool%20completely.%3C/p%3E%3Cp%3ETo%20finish%20the%20cookies:%20Melt%20the%20white%20chocolate%20chips%20in%20a%20microwave%20safe%20bowl%20or%20over%20a%20double-boiler.%20Drizzle%20the%20white%20chocolate%20over%20the%20cooled%20cookies.%20Let%20the%20cookies%20sit%20until%20the%20chocolate%20hardens.%3C/p%3E%3Cp%3EMakes%2024,%205-inch%20cookies.%20%20If%20you%20are%20going%20to%20store%20the%20cookies%20for%20more%20than%20a%20day,%20you%20may%20want%20to%20keep%20them%20in%20the%20refrigerator.%20%20IF%20you%20can
