...I%20finally%20tracked%20down%20a%20store%20employee%20and%20was%20directed%20to%20a%20dry%20goods%20isle.%3C/p%3E%3Cp%3EAll%20this%20to%20find%20a%20simple,%20tortilla%20like%20package%20of%20white%20disks.%20For%2098%20cents.%20For%20100%20wraps.%20I%20think%20I%20spent%20more%20in%20gas%20getting%20there.%3C/p%3E%3Cp%3EYou%20see...I%20am%20not,%20in%20the%20least,%20familiar%20with%20rice%20paper%20wraps.%20They're%20pretty%20cool%20little%20things.%20No%20cooking%20required.%20Just%20a%20little%20softening%20in%20warm%20water.%20Not%20only%20is%20this%20dish%20vegan,%20but%20other%20than%20cooking%20the%20rice%20noodles,%20it's%20raw.%20And%20I%20don't%20know%20about%20your%20area%20but%20raw,%20vegan%20food%20is%20HUGE%20around%20here.%3C/p%3E%3Cp%3EAnd%20my%20daughter%20has%20jumped%20on%20that%20wagon.%20Big%20time.%3C/p%3E%3Cp%3ENow,%20let%20me%20talk%20a%20little%20about%20these%20rice%20noodles.%20Red%20rice%20noodles%20to%20be%20exact.%20Yes,%20they%20have%20that%20reddish%20thing%20going%20on.%20Yes%20they%20are%20made%20of%20rice.%20I%20ended%20up%20spending%20a%20lot%20of%20time%20separating%20the%20noodles%20once%20cooked.%20I%20think%20if%20you%20use%20lots%20of%20water%20and%20spend%20some%20time%20stirring,%20it%20will%20save%20you%20time%20in%20the%20long%20run.%3C/p%3E%3Cp%3EAlso....once%20cooked,%20they%20have%20this%20pinkish%20hue%20thing%20happening.%20Sort%20of%20a%20fleshy%20color.%20When%20you%20put%20the%20spring%20roll%20together....don't%20be%20shocked%20or%20surprised%20if%20it%20resembles%20a...um...particular%20part%20of%20the%20male%20anatomy.%3C/p%3E%3Cp%3EJust%20know....these%20spring%20rolls%20taste%20wonderful!%20The%20vegetable%20combination%20is%20fantastic.%20It's%20like%20having%20the%20perfect%20salad%20(minus%20the%20lettuce)...all%20rolled%20up%20tightly,%20in%20a%20little%20roll...easily%20enhanced%20with%20your%20favorite%20dip.%3C/p%3E%3Cp%3EZing%20Rolls%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20water%20to%20a%20boil.%20Remove%20from%20heat.%20Add%20rice%20noodles,%20stirring%20to%20separate%20noodles.%20(I%20suggest%20that%20you%20stir%20longer%20than%20you%20think%20you%20have%20to%20so%20they%20don't%20stick%20together).%20Let%20stand%208%20to%2010%20minutes%20or%20until%20noodles%20are%20tender%20but%20firm.%20Drain%20well.%20Place%20in%20a%20large%20bowl%20of%20%20cold%20water.%20Separate%20noodles%20fully.%20Set%20aside.%3C/p%3E%3Cp%3EFill%20a%209%22%20pie%20plate%20with%20warm%20water.%20For%20each%20spring%20roll,%20dip%201%20rice%20paper%20wrap%20in%20water%20to%20wet%20completely.%20Place%20on%20your%20work%20surface.%20Blot%20dry%20with%20a%20paper%20towel.%3C/p%3E%3Cp%3EPlace%201/3%20cup%20of%20rice%20noodles%20in%20bottom%20third%20of%20the%20rice%20paper.%3C/p%3E%3Cp%3ELayer%20with%204%20bell%20pepper%20strips,%208%20cucumber%20strips,%201%20TB%20carrot,%202%20avocado%20slices,%201/2%20tsp%20cilantro%20and%201%20tsp%20peanuts.%3C/p%3E%3Cp%3EFold%20in%20sides,%3C/p%3E%3Cp%3Ethen%20gently%20roll%20tightly%20to%20enclose%20filling.%3C/p%3E%3Cp%3EPlace%20spring%20roll%20on%20a%20platter.%20Cover%20with%20a%20damp%20paper%20towel%20and%20plastic%20wrap.%20Repeat%20with%20remaining%20rice%20paper%20wrappers%20and%20filling%20ingredients%20to%20make%2012%20spring%20rolls.%3C/p%3E%3Cp%3ERefrigerate%20for%20at%20least%2030%20minutes%20or%20up%20to%202%20hours.%20Serve%20with%20dipping%20sauce.%3C/p%3E%3Cp%3EI%20used%20the%20Sweet%20Red%20Chili%20Sauce.%3C/p%3E){kind=link}
