Receta Thai Vegetarian Noodles

Ingredientes
- 10 ounce chantaboon rice stick noodles
- 1/4 c. vegetable oil
- 2 tsp chopped garlic
- 1 c. broccoli florets
- 3/4 c. sliced onions
- 2/3 c. sliced snow peas
- 1/2 c. diced celery
- 1/4 c. julienned carrots
- 1/4 c. diced red bell pepper
- 1/4 c. diced mushrooms
- 3 Tbsp. crushed unsalted peanuts
- 2 Tbsp. fish sauce
- 2 Tbsp. Thai chile paste with garlic and
- Â Â sweet basil
- 1 Tbsp. white rice vinegar
- 2 tsp thin soy sauce
- 1 tsp Thai pepper pwdr
- 2 Tbsp. minced mint leaves
- 1 sprg mint
- 1 c. fresh bean sprouts
- 2 Tbsp. thinly-sliced leeks
Direcciones
- Soak noodles in 8 c. cool water for 45 min. Drain in a colander and set aside.
- Heat vegetable oil in a large skillet over high heat. Add in garlic and saute/fry, stirring, till lightly browned, about 1 minute. Add in broccoli, onions, snow peas, celery, carrots, bell pepper and mushrooms, and stir-fry for 1 minute. Add in peanuts, fish sauce, chile paste, vinegar, soy sauce, pepper pwdr and noodles, and cook, stirring continuously, till heated through and well mixed, about 2 min. Stir in minced mint.
- Transfer to a platter, sprinkle with bean sprout and leeks and garnish with mint sprig.
