.%20Does%20not%20mean%20I%20don't%20like%20them,%20mind%20you.%20Just%20that%20I%20don't%20take%20the%20trouble%20of%20making%20them,%20especially%20when%20I%20can%3C/p%3E%3Cp%3Ehave%20someone%20nice%20make%20them%20for%20me%20:)%20Craving%20for%20sweets,%20including%20chocolate%20and%20ice%20cream,%20hardly%20ever%20hits%20me.%20And%20when%20I%20do%20make%20a%20sweet/dessert,%20it%20is%20usually%20something%20simple%20and%20quick,%20like%20the%20watergate%20salad.%20%20Thanks%20to%20my%20mother%20and%20sister%20come%20these%20two%20sweet%20dishes%20that%20were%20made%20by%20Mom%20for%20Gowri%20festival%20recently%20and%20were%20photographed%20and%20sent%20to%20me,%20recipe%20and%20all,%20by%20Sis.%20Now%20that%20is%20sweet!%20:)%3C/p%3E%3Cp%3EThambittu%20is%20especially%20made%20during%20some%20festivals,%20Gowri%20habba%20being%20one%20of%20them.%20Thambittu%20is%20usually%20round%20and%20flattened%20but%20for%20the%20festival%20puja,%20%20some%20are%20shaped%20into%20small%20diyas/lamps.%20A%20ghee-soaked%20wick%20is%20kept%20inside%20the%20well%20of%20the%20diya%20and%20lit%20as%20a%20lamp%20for%20the%20puja.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20cup%20rice,%20washed%20and%20soaked%20for%20about%20an%20hour%3C/p%3E%3Cp%3E1%20cup%20jaggery/brown%20sugar%3C/p%3E%3Cp%3E1%20cup%20water%3C/p%3E%3Cp%3E1%20cup%20shredded%20fresh%20coconut%3C/p%3E%3Cp%3E1%20tbsp%20ghee%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EDry%20the%20rice%20inside%20the%20house,%20on%20a%20cotton%20sheet,%20for%20about%20an%20hour%20or%20two.%20The%20outer%20layer%20should%20be%20dry%20but%20when%20you%20break%20a%20grain%20it%20should%20still%20be%20a%20little%20damp%20inside.%20Powder%20the%20rice%20until%20fine.%3C/p%3E%3Cp%3EGently%20heat%20the%20rice%20powder%20in%20a%20kadai%20but%20do%20not%20allow%20it%20to%20get%20too%20hot%20or%20browned.%20The%20flour%20%20should%20be%20damp%20enough%20to%20be%20made%20into%20balls.%20Keep%20aside.%3C/p%3E%3Cp%3EMelt%20jaggery%20in%20water.%20Heat%20jaggery%20water%20and%20%20coconut%20in%20a%20thick%20bottomed%20pan%20and%20allow%20it%20to%20boil.%3C/p%3E%3Cp%3EAdd%20ghee%20to%20the%20%20boiled%20mixture%20and%20then%20add%20in%20the%20rice%20flour.%20Mix%20well%20immediately%20and%20%20turn%20off%20the%20heat%20and%20cover%20with%20a%20firm%20lid.%3C/p%3E%3Cp%3EAllow%20it%20to%20cool%20down%20%20enough%20to%20be%20handled.%20Make%20into%20balls.%3C/p%3E%3Cp%3EThey%20are%20best%20eaten%20after%20they%20%20have%20been%20used%20as%20ghee%20lamps%20for%20pujas.%20The%20crust%20is%20charred,%20the%20wick%20%20has%20to%20be%20removed%20carefully%20and%20oh%20the%20aroma!%3C/p%3E%3Cp%3EAkki%20Kadalebebe%20Payasa%20(rice-chanadal%20kheer)%20is%20made%20during%20festivals%20or%20on%20occasions%20like%20weddings%20and%20upanayanam.%20Or%20as%20in%20the%20case%20with%20all%20the%20sweet%20toothed%20members%20of%20the%20family,%20anytime%20the%20craving%20hits!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EIn%20a%20pressure%20cooker,%20cook%20rice%20and%20dal%20together%20in%204%20cups%20of%20water.%20To%20make%20it%20richer%20you%20can%20cook%20it%20in%20milk%20but%20be%20prepared%20for%20a%20messy%20cooker%20and%20lots%20of%20spillage.%203%20whsitles.%3C/p%3E%3Cp%3EUsually%20coconut%20shreds%20are%20added%3C/p%3E%3Cp%3Ebut%20a%20richer%20flavour%20comes%20from%20grinding%20the%20coconut%20with%20a%20little%3C/p%3E%3Cp%3Ewater%20to%20make%20a%20very%20smooth%20paste.%20Keep%20aside.%20*If%20using%20soaked%20almonds,%20grind%20along%20with%20the%20coconut.%20This%20adds%20a%20beautiful%20favor%20to%20the%20payasa,%20though%20traditionally%20this%20is%20not%20added.%3C/p%3E%3Cp%3EHeat%20ghee%20and%20roast%20the%20dry%20fruits%20and%20nuts%20meant%20for%20garnish.%20Keep%20aside.%3C/p%3E%3Cp%3EIn%20a%20thick%20bottomed%20pan,%20melt%20the%20jaggery%20on%20a%20slow%20flame%20with%20about%201%20cup%20of%20water.%20Allow%20the%20jaggery%20to%20dissolve%20completely.%20Strain%20to%20remove%20the%20impurities.%3C/p%3E%3Cp%3ENow%20add%20the%20cooked%20rice/dal%20mix%20and%20boil%20for%205-10%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20ground%20coconut%20(or%20coconut-almond)%20paste,%20mix%20well%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EGarnish%20with%20roasted%20nuts/fruits.%3C/p%3E%3Cp%3EVariations%20include%20adding%20roasted%20and%20powdered%20khuskhus,%20roasted%20and%20ground%20copra%20or%20copra%20slices%20roasted%20in%20ghee.%3C/p%3E){kind=link}
