- 2 large farm fresh eggs
- 1 c. mashed bananas (2 or 3)
- 2 c. flour
- 1 t. baking soda
- 1/2 t. fine sea salt
- 3/4 c. chopped pecans

%3C/p%3E%3Cp%3EFinally,%20I%20pulled%20out%20an%20old%20family%20favorite%20cookbook:%20%20%20Creative%20Cooking%E2%80%94Best%20with%20your%20Gas%20Range.%20%20%20You%20see,%20many%20moons%20ago,%20utility%20companies%20would%20provide%20%E2%80%9Cpremiums%E2%80%9D%20(as%20my%20grandmother%20called%20them).%20%20%20Today%20we%20would%20just%20call%20them%20freebies.%20%20%20Apparently%20in%20the%20early%2060s,%20%20gas%20utility%20companies%20would%20give%20away%20this%20cookbook%20to%20promote%20buying%20a%20gas%20range.%3C/p%3E%3Cp%3EThat%20makes%20it%20seem%20they%20were%20in%20the%20dark%20ages%20before%20that%20time.%20%20%20(I%20am%20old,%20but%20I%20am%20not%20that%20old!)%3C/p%3E%3Cp%3EI%20remembered%20that%20mom%E2%80%99s%20go-to%20banana%20bread%20recipe%20came%20from%20this%20cook%20book.%20%20%20I%20found%20my%20copy%20(because%20for%20some%20reason%20%20my%20mom%20had%20a%20huge%20cache%20of%20these%20cook%20books%20so%20everyone%20in%20the%20family%20has%20one).%20%20%20%20%20I%20decided%20to%20swap%20out%20the%20butter%20for%20coconut%20oil%20to%20see%20what%20would%20happen.%3C/p%3E%3Cp%3EWhat%20happened?%20%20%20SUCCESS!!!!!!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer,%20cream%20together%20coconut%20oil%20and%20sugar.%20%20%20%20Mix%20until%20creamy.%20%20%20Add%20eggs,%20one%20at%20a%20time,%20and%20continue%20mixing.%20%20%20%20Add%20mashed%20bananas%20and%20mix%20until%20fully%20incorporated.%3C/p%3E%3Cp%3EIn%20a%20separate%20mixing%20bowl,%20whisk%20together%20the%20flour,%20baking%20soda%20and%20salt.%3C/p%3E%3Cp%3EWith%20the%20mixer%20running%20on%20lowest%20speed,%20add%20the%20flour%20mixture%20to%20the%20banana%20mixture.%20%20%20%20Add%20pecans%20and%20mix%20just%20until%20everything%20is%20incorporated.%20%20%20Don%E2%80%99t%20over%20mix.%3C/p%3E%3Cp%3ESpray%20a%209%20x%205%20x%203%20loaf%20pan%20with%20cooking%20spray.%20%20%20Pour%20batter%20in%20and%20bake%20for%201%20hour.%3C/p%3E%3Cp%3ERemove%20from%20oven%20when%20done%20and%20let%20cool%20for%2010%20minutes.%20%20%20%20Carefully%20remove%20from%20pan%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3ESlice%20and%20serve.%3C/p%3E%3Cp%3EA%20retro%20picture%20for%20an%20updated%20retro%20recipe.%3C/p%3E%3Cp%3EThis%20bread%20has%20a%20crunchy%20exterior,%20but%20as%20I%20remember%20from%20my%20mom%E2%80%99s%20bread,%20there%20will%20be%20a%20few%20delicious%20gooey%20spots%20in%20the%20center.%3C/p%3E%3Cp%3ESecret%20ingredients:%20coconut%20oil%20and%20gnarly%20bananas.%3C/p%3E%3Cp%3EI%20love%20the%20loaf%20pan.%20It%20is%20Frankoma.%3C/p%3E%3Cp%3EReady%20for%20breakfast.%3C/p%3E%3Cp%3EBananas%20that%20are%20best%20for%20breads,%20cakes%20and%20muffins%20are%20those%20that%20are%20very%20nearly%20ready%20for%20the%20trash%20bin.%20%20%20%20%20Anytime%20I%20have%20bananas%20that%20are%20that%20close%20to%20burial,%20I%20simply%20toss%20them%20in%20the%20freezer%20for%20later%20use.%20%20%20%20%20They%20will%20look%20extra%20gnarly%20(the%20peels%20turning%20completely%20black)%20but%20they%20will%20be%20great%20and%20almost%20caramely%20%20for%20baking%20recipes.%3C/p%3E){kind=link}
