- 3/4 c. rolled oats
- 1 c. whole-wheat flour*
- 1/2 t. baking soda
- 1/2 t. fine sea salt
- 1/2 c. coconut oil (in solid form)
- 1/3 c. granulated sugar
- 1/3 c. light brown sugar
- 1 large farm fresh egg
- 1 t. pure vanilla extract
- 3/4 c. milk chocolate chips
- 1/8 c. cacao nibs

%20%20%20%20Then%20I%20met%20The%20Hubs,%20and%20I%20have%20since%20tried%20to%20best%20the%20best%20with%20every%20batch,%20revising%20and%20adapting%20recipes%20until%20I%20find%20the%20perfect%20mix%20of%20chewiness,%20crispiness,%20and%20chocolatey%20goodness.%3C/p%3E%3Cp%3EI%20thought%20I%20had%20found%20success%20with%20an%20adaptation%20of%20Levain%20Bakery%20Chocolate%20Chip%20Cookies%20from%20Jen%20at%20%20Juanita%E2%80%99s%20Cocina%20that%20I%20posted%20for%20a%20Cook%20the%20Books%20post.%3C/p%3E%3Cp%3EThat%20was%20then,%20this%20is%20now.%20%20%20%20%20Today%20in%20our%20household%20it%20is%20all%20about%20healthy%20eating%20and%20cooking.%20%20%20I%20can%E2%80%99t%20wait%20for%20spring,%20our%20garden%20and%20farmers%20markets.%20%20%20%20(But,%20don%E2%80%99t%20let%20me%20fool%20%20you,%20especially%20after%20all%20these%20chocolate%20posts%E2%80%94-I%20am%20sure%20we%20will%20backslide%20a%20bit%20at%20times.)%3C/p%3E%3Cp%3EHealthy%20goodness.%3C/p%3E%3Cp%3ESo,%20I%20was%20now%20on%20the%20look%20out%20for%20a%20healthy%20and%20delicious%20chocolate%20chip%20cookie.%20%20%20I%20found%20one%20at%20Eating%20Well%20with%20Bev%E2%80%99s%20Chocolate%20Chip%20Cookies.%20%20%20I%20adapted%20them%20a%20bit%20more%20by%20omitting%20the%20butter%20and%20canola%20oil%20in%20the%20original%20recipe%20and%20adding%20coconut%20oil.%20%20%20And,%20learning%20from%20Chef%20Sarah%20in%20%20our%20chocolate%20cooking%20class,%20I%20decreased%20the%20chocolate%20chips%20and%20added%20cacoa%20nibs%20for%20a%20nutty%20flavor.%3C/p%3E%3Cp%3EThese%20are%20delicious!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%3C/p%3E%3Cp%3EPulse%20oats%20in%20a%20blender%20until%20finely%20ground.%3C/p%3E%3Cp%3EPlace%20oats,%20flour,%20baking%20soda%20and%20salt%20in%20a%20medium%20bowl%20and%20whisk%20to%20combine.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20with%20paddle%20attachment,%20beat%20coconut%20oil%20and%20sugars%20until%20fluffy.%20%20%20Add%20egg%20and%20vanilla;%20beat%20until%20smooth%20and%20creamy.%20With%20the%20mixer%20running,%20carefully%20add%20the%20dry%20ingredients,%20beating%20on%20low%20speed%20until%20just%20combined.%3C/p%3E%3Cp%3EStir%20in%20chocolate%20chips%20and%20cacao%20nibs.%3C/p%3E%3Cp%3EUsing%20a%20medium%20cookie%20scoop,%20drop%20the%20dough%20at%20least%201%20inch%20apart,%20onto%20prepared%20baking%20sheets%20(lined%20with%20parchment%20paper%20or%20silicon%20pads).%20Bake%20cookies,%201%20sheet%20at%20a%20time,%20until%20firm%20around%20the%20edges%20and%20golden%20on%20top,%20about%2012-15%20minutes.%3C/p%3E%3Cp%3EDon%E2%80%99t%20smooch%20these%20down.%20Bake%20them%20in%20the%20scooped%20form.%3C/p%3E%3Cp%3ECool%20the%20cookies%20for%202%20minutes%20on%20the%20baking%20sheets,%20then%20transfer%20to%20wire%20racks%20to%20cool%20completely.%3C/p%3E%3Cp%3E*I%20always%20use%20a%20very%20fine%20whole%20wheat%20flour%20like%20Wheat%20Montana%E2%80%99s%20Bronze%20Chief,%20Stone%20Stack%20Mill%E2%80%99s%20whole%20wheat%20flour,%20or%20a%20whole%20wheat%20pastry%20flour.%3C/p%3E%3Cp%3EI%20found%20that%20I%20can%20now%20buy%20coconut%20oil%20in%20pre-measured%20baking%20bars.%20%20%20I%20used%20Kelapo%20brand%20and%20I%20am%20in%20love.%3C/p%3E%3Cp%3EI%20made%20these%20for%20The%20Hubs,%20his%20mother,%20and%20his%20brother%20and%20they%20loved%20them!%20%20%20%20Even%20before%20I%20told%20them%20they%20were%20healthier.%20%20%20%20%20%20The%20Hubs%20deemed%20them%20%E2%80%9Ccrispy%20yet%20chewy.%E2%80%9D%20%20(I%20used%20only%20chocolate%20chips%E2%80%941%20cup%E2%80%94in%20this%20batch.)%20%20%20I%20made%20these%20again%20with%20the%20cacao%20nibs%20for%20the%20nephews%20during%20Spring%20Break.%20%20%20%20They%20loved%20them.%3C/p%3E%3Cp%3EIn%20fact,%20we%20had%20a%20cookie%20tasting%20contest%20between%20this%20recipe%20and%20the%20Levain%20cookie%20recipe.%20%20%20%20%20These%20won.%3C/p%3E%3Cp%3EPlease%20try%20these.%20%20%20I%20can%E2%80%99t%20stress%20how%20delicious%20they%20are.%3C/p%3E%3Cp%3EYes,%20I%20know%20that%20coconut%20oil%20is%20the%20new%20fad%20and%20hyped%20super-food.%20%20%20%20%20I%20have%20read%20that%20it%20helps%20with%20everything%20from%20growing%20healthier%20hair,%20helping%20your%20body%20%E2%80%9Crun%20smoother,%E2%80%9D%20keeping%20your%20HDL%20in%20check,%20and%20even%20helping%20those%20pesky%20and%20annoying%20bumps%20on%20the%20backs%20of%20arms%20and%20legs%20(by%20using%20it%20as%20a%20lotion,%20not%20eating%20it!)%3C/p%3E%3Cp%3EAnd,%20if%20you%20can%20believe%20everything%20you%20read%20on%20the%20internet%20about%20cacao%20nibs:%3C/p%3E%3Cp%3EThey%20are%20a%20one%20of%20the%20best%20dietary%20sources%20of%20magnesium%20as%20well%20as%20a%20good%20source%20of%20calcium,%20iron,%20copper,%20zinc%20and%20potassium.%20%20Studies%20show%20that%20cacao%20nibs%20have%20higher%20antioxidant%20levels%20than%20blueberries,%20red%20wine%20and%20green%20tea.%20The%20antioxidants%20in%20cacao%20nibs%20are%20also%20more%20stable%20than%20in%20other%20f
