Receta The Best Potato Kugel

Ingredientes
- 10 med. potatoes, peeled
- 4 lg. onions
- 4 Large eggs
- 1/2 c. matzo meal
- 1/2 c. peanut oil
- salt and pepper to taste

- In a food processor, finely mince 2 onions (you can use the large shredding disc.
- Fry the onions in warm oil till very brown, but not crispy. Grate potatoes using the same shredding disc.
- Grate 5 of the potatoes using the shredding disc. Set aside in a separate large bowl.
- Remove shredding disc and fit the food processor with the chopping blade. Add in the 2 onions and puree (no need to clean food processor before adding onions!) Add in the 5 potatoes, fried onions and matzo meal and pulse repeatedly till the potatoes are coarsely minced. Add in the Large eggs and pulse till combined. Combine contents of food processor with the grated potatoes in the bowl and mix well.
- Bake in large glass pan at 400
