Receta The Turtle Deli’s Cheesecake

(Note: This recipe is taken from the book: South Carolina’s Historic Restaurants and their Recipes by Dawn O’Brien and Karen Mulford. The cheescake is/was served at The Turtle Deli in Summerville.

I purchased this recipe book for my mother whilst on holiday in Charleston, and have made this cheesecake a number of times, and everyone who has tasted it loves it!)

  • 1½ sticks (6 oz / ¾ cup / 185 ml / 175 g) margarine/butter
  • 2 cups (500 ml) graham cracker crumbs *
  • 1¾ cups (430 ml) sugar
  • 2 x 8-ounce (2 x 225 g) packages cream cheese, softened (use full-fat Philadelphia, if possible)
  • 1/3 cup (160 ml) cornstarch
  • 16 ounces (450 g) cottage cheese (not fat-free)
  • 4 eggs (extra-large eggs)
  • 3 tablespoons (45 ml) lemon juice
  • 2 cups (500 ml) sour cream
  • for those of you who don’t live in the US, use Marie biscuits (cookies, for the Americans).

Direcciones

  1. Melt ½ stick (¼ cup) margarine/butter.
  2. Mix together graham cracker crumbs, ¼ cup of sugar and the melted margarine. Pat into the bottom of a 10-inch springform pan and set aside.
  3. In a large bowl blend the cream cheese , remaining sugar and cornstarch, beating with an electric mixer until thoroughly blended.
  4. Put cottage cheese, eggs and lemon juice in a blender bowl and blend on medium speed until well mixed. Pour into the cream cheese mixture and beat well with an electric mixer – about 2 minutes, or until thoroughly blended.
  5. Melt the remaining margarine/butter and add to the mixture, beating well. Add sour cream and beat until blended.
  6. Pour into graham cracker crust. Bake at 350 ° F (180° C) for 1½ hours. Turn off the oven and leave the cake in the oven for two hours.
  7. Remove the cheesecake from the oven and allow it to remain at room temperature for an additional two hours before serving or refrigerating.
