  • 2 x Egg whites
  • 1/2 c. Sugar
  • 1/8 tsp Salt
  • 2 Tbsp. Cool water
  • 1 tsp Vanilla extract
  •     Or possibly almond extract

  1. 1. Beat egg whites, sugar, salt, and cool water till blended. Place the mix in a double boiler over boiling water.
  2. 2. Beat these ingredients with a wire whisk 3 min, or possibly till stiff.
  3. Remove the icing from the heat.
  4. 3. Add in 1 tsp. vanilla or possibly almond extract. Beat the icing well. Spread it over jellied fruit, pies or possibly tarts, cakes, etc., which have been cooled. Top it with minced nuts or possibly coconut if you like. This is a soft icing. The recipe does not indicate the volume of icing which results.
