Ingredientes

  • 2 tablespoons unsalted butter
  • 2-3 leeks - sliced
  • 5 medium potatoes - sliced thinly
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 28 oz. can peeled TuttoRosso plum tomatoes - drained
  • 1/3 cup freshly grated Parmesan cheese
  • Using a mandoline knife, slice potatoes or sweet potatoes thin (1/8 inch thick). Transfer to a bowl and toss with olive oil, salt and pepper
