Receta Tortellini Salad With Sun Dried Tomatoes

Ingredientes
- 1/3 c. Oil packed sun-dry tomatoes, liquid removed, minced
- 1 Tbsp. Oil reserved from the tomatoes
- 1/3 c. Extra virgin olive oil
- 1 Tbsp. Lemon juice
- 2 x Cloves garlic, chopped
- 1 jar (6 ounce) marinated artichoke, hearts, liquid removed
- 1/4 lb Cashews, toasted
- 1 lb Tortellini, cooked
- Â Â Salt and freshly grnd pepper to taste
- Â Â Parmesan or possibly Romano Cheese (optional)

- 1. Combine 1 tbsp of the liquid reserved from tomatoes, oil, lemon juice and garlic in large bowl.
- 2. Stir in the tomatoes, artichoke hearts and cashews. Add in tortellini and toss thoroughly. Season with salt and pepper.
- 3. Toss well, cover with plastic wrap, and chill for 2-3 hrs. Serve with hot bread for a great lunch. You can also pass around fresh, grated Parmesan or possibly Romano cheese.
