%3C/p%3E%3Cp%3EThe%20trick%20to%20this%20whipped%20cream%20frosting%20is%20powdered%20sugar.%20%20It%20keeps%20the%20whipped%20cream%20stable%20for%20much%20longer%20than%20usual.%20%20This%20cake%20sat%20out%20at%20a%20warm%20room%20temperature%20for%20over%203%20hours%20and%20did%20not%20become%20runny.%3C/p%3E%3Cp%3EI've%20prepared%20this%20%22wowzers%22%20of%20a%20cake%20for%20Christmas%20Day%20dessert.%20%20Since%20the%20fridge%20is%20usually%20(gratefully)%20packed%20with%20food%20and%20has%20no%20storage%20for%20this%20behemoth,%20I%20set%20it%20on%20the%20porch%20or%20in%20the%20garage%20(when%20the%20temperature%20is%20in%20the%20low%2050s%20to%20upper%2030s).%3C/p%3E%3Cp%3EOne%20more%20thing:%20%20the%20original%20recipe%20makes%20an%20incredibly%20large%20cake%20(three%209%22%20layers).%20%20I%20halved%20the%20cake%20recipe%20and%20used%20two%208%22%20cake%20pans.%20%20But%20I%20kept%20the%20original%20amounts%20for%20the%20whipped%20cream%20frosting%20and%20the%20ganache.%20%20You%20might%20end%20up%20with%20a%20little%20extra%20whipped%20cream.%20%20But%20I'm%20sure%20you%20can%20find%20a%20good%20use%20for%20it%20somewhere%20else%20(like%20directly%20in%20your%20mouth).%3C/p%3E%3Cp%3EPlease%20read%20through%20the%20recipe%20first.%20%20It's%20absolutely%20not%20a%20difficult%20cake%20to%20make---but%20timing%20is%20very%20important:%20the%20cake%20needs%20to%20cool%20completely%20so%20it%20won't%20liquify%20the%20whipped%20cream%20when%20it's%20frosted.%20%20Then%20the%20frosted%20cake%20need%20to%20be%20refrigerated%20for%20an%20hour%20before%20adding%20the%20chocolate%20glaze%20in%20order%20for%20the%20whipped%20cream%20frosting%20to%20stabilize.%20%20And%20the%20chocolate%20glaze%20can't%20be%20too%20hot%20(it%20will%20melt%20the%20frosting)%20or%20too%20cool%20(it%20won't%20pour).%20%20And%20then%20the%20frosted%20and%20glazed%20cake%20needs%20to%20be%20refrigerated%20again%20in%20order%20to%20%22set%22%20the%20glaze.%20%20High%20maintenance?%20Yes.%20%20Difficult?%20%20No!%20%20You%20can%20do%20this!%3C/p%3E%3Cp%3ETuxedo%20Cake%3C/p%3E%3Cp%3E(Makes%20two%208%22%20layers)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20Arrange%20baking%20rack%20in%20center%20of%20oven.%20%20%20Line%20the%20bottom%20of%20two%208%22%20cake%20pans%20with%20parchment%20paper.%20%20Generously%20butter%20paper%20and%20sides%20of%20pan.%20%20Dust%20with%20flour,%20tapping%20pan%20to%20remove%20excess%20flour%20if%20necessary.%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan%20set%20over%20medium%20heat,%20mix%20together%20the%20butter,%20water,%20and%20canola%20oil.%20%20In%20a%20large%20mixing%20bowl,%20whisk%20together%20the%20sugar,%20cocoa%20powder%20and%20flour%20until%20very%20well%20combined.%3C/p%3E%3Cp%3EPour%20in%20the%20butter/oil%20mixture%20and%20continue%20whisking%20until%20very%20smooth.%20%20Whisk%20in%20the%20eggs,%20one%20at%20a%20time,%20and%20then%20the%20buttermilk.%20%20Whisk%20in%20the%20baking%20soda,%20salt%20and%20vanilla%20all%20at%20once--just%20until%20combined.%3C/p%3E%3Cp%3EBake%20for%2025-35%20minutes%20or%20until%20the%20cake%20edges%20begin%20to%20pull%20away%20from%20the%20sides%20of%20the%20pan%20AND%20a%20toothpick%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean.%20%20(I%20give%20such%20a%20wide%20range%20of%20baking%20times%20because%20I%20have%20experienced%20both%20times%20with%20my%20ancient,%20unpredictable%20oven.%20%20It%20would%20be%20a%20crying%20shame%20to%20over%20(or%20under)%20bake%20this%20cake.%20%20Please%20monitor%20and%20check%20the%20cakes%20often%20as%20they%20bake.)%3C/p%3E%3Cp%3ERemove%20the%20cakes%20from%20the%20oven%20when%20done.%20%20Cool%20on%20a%20wire%20rack%20(in%20the%20cake%20pan)%20for%2015-20%20minutes%20(this%20is%20an%20important%20step%20and%20will%20make%20all%20the%20difference%20in%20getting%20the%20cake%20out%20in%20one%20piece).%20%20Invert%20the%20cakes%20on%20the%20baking%20rack%20and%20they%20should%20emerge%20whole.%20%20Remove%20parchment%20paper%20and%20continue%20cooling%20for%20at%20least%202%20hours.%3C/p%3E%3Cp%3ETo%20make%20the%20frosting:%20%20whip%20the%20chilled%20heavy%20cream%20with%20either%201)%20a%20whisk%20attachment%20on%20a%20mixer%20(at%20high%20speed),%20or%202)%20by%20hand%20with%20a%20wire%20whisk%20until%20soft%20peaks%20form.%20%20(Don't%20overwhip%20or%20you'll%20end%20up%20with%20butter.)%20%20After%20the%20peaks%20have%20formed,%20add%20the%20powdered%20sugar%20and%20whip%20until%20combined.%3C/p%3E%3Cp%3EOnce%20the%20cake%20is%20completely%20cooled%20and%20you're%20ready%20to%20frost%20it:%20%20place%20one%20cake%20on%20a%20platter,%20rounded%20side%20down.%20%20Add%20a%20generous%20layer%20of%20frosting%20to%20the%20top%20and%20smooth%20with%20an%20off-set%20spatula.%20%20Top%20with%20the%20second%20cake,%20rounded%20side%20up.%20%20Generously%20frost%20the%20sides%20and%20top.%20%20Refrigerate%20for%20at%20least%20an%20hour%20so%20the%20whipped%20cream%20will%20stabilize.%3C/
