  • 2 tablespoons olive oil
  • 1/2 cup onion-diced
  • 1/2 cup carrots-diced
  • 3 cloves garlic-minced
  • 1 rotisserie chicken-diced up
  • 1 (15 ounce) can Red Gold diced tomatoes, with juices
  • 2 boxes low-sodium vegetable or chicken broth
  • 9 ounces tortellini (I used the Bertolli refrigerated variety)
  • 3 cups fresh baby spinach
  • Salt and pepper to taste
  • Parmesan cheese-grated
