%20and%20writing%20%22ARBORIO%20RICE!!!%22%20on%20the%20grocery%20list.%3C/p%3E%3Cp%3EI%20am%20a%20big%20fan%20of%20risotto%20-%20it's%20creamy,%20filling,%20hearty,%20as%20well%20as%20a%20perfect%20palette%20for%20flavors%20both%20subtle%20and%20bold.%20As%20I%20was%20reading%20through%20recipes%20online%20(I%20looked%20at%20Scott%20Conant's%20recipe%20in%20NY%20Magazine%20and%20DOC's%20recipe%20on%20The%20Kitchn),%20I%20KNEW%20the%20combination%20of%20the%20garlicky%20ramps,%20fresh,%20floral%20lemon%20and%20creamy%20risotto%20would%20be%20delicious.%3C/p%3E%3Cp%3EI%20began%20by%20separating%20the%20ramp%20stalks%20from%20the%20leaves%20so%20that%20I'd%20be%20able%20to%20cook%20each%20part%20for%20the%20best%20flavor%20and%20consistency.%3C/p%3E%3Cp%3EYou%20don't%20add%20the%20chopped%20up%20greens%20until%20the%20very%20end%20of%20cooking,%20then%20you%20fold%20them%20into%20the%20risotto,%20along%20with%20the%20lemon%20zest%20and%20Parmesan%20cheese.%3C/p%3E%3Cp%3EJust%20a%20little%20lemon%20zest%20adds%20a%20world%20of%20light%20flavor%20to%20this%20dish.%20And%20thanks%20to%20my%20beloved%20microplane%20zester,%20it%20only%20takes%20a%20few%20seconds%20to%20produce%20a%20lovely%20little%20pile%20of%20zest.%3C/p%3E%3Cp%3EThe%20first%20step%20of%20the%20cooking%20process%20is%20to%20saut%C3%A9e%20the%20chopped%20ramp%20stalks%20and%20shallot%20in%20butter.%3C/p%3E%3Cp%3EOnce%20the%20ramp%20stalks%20and%20shallot%20have%20softened,%20you%20add%20the%20Arborio%20rice%20and%20saut%C3%A9e%20it%20for%20a%20few%20minutes,%20stirring%20all%20the%20while,%20until%20the%20edges%20of%20each%20grain%20of%20rice%20edges%20become%20opaque%20and%20the%20center%20turns%20white.%3C/p%3E%3Cp%3EThen%20comes%20the%20tedious%20part%20-%20add%20stock%20and%20stir%20repeatedly%20until%20it's%20absorbed.%20Repeat.%20Repeat.%20Repeat.%20Repeat.%20Repeat.%20Repeat.%20Repeat...%3C/p%3E%3Cp%3EJust%20when%20you%20begin%20to%20fear%20that%20your%20arm%20may%20actually%20drop%20off%20from%20all%20the%20stirring,%20it's%20time%20to%20fold%20in%20the%20ramp%20greens,%20lemon%20zest%20and%20grated%20Parmesan%20cheese!%3C/p%3E%3Cp%3EStir%20well%20to%20ensure%20even%20distribution%20of%20these%20yummy%20late-stage%20additions.%3C/p%3E%3Cp%3ENow%20it's%20time%20to%20enjoy%20the%20fruits%20of%20your%20labor.Yum!%3C/p%3E%3Cp%3EWild%20Ramp%20&%20Lemon%20Risotto%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Separate%20the%20ramp%20stalks%20from%20the%20greens%20and%20chop%20each,%20keeping%20them%20separate.%20Finely%20chop%20the%20shallots.%3C/p%3E%3Cp%3E2.%20Heat%20the%20stock%20in%20a%20saucepan%20(you'll%20want%20to%20position%20this%20right%20behind%20whatever%20burner%20you%20plan%20to%20use%20for%20the%20risotto%20pan%20since%20you're%20going%20to%20be%20ladling%20stock%20into%20the%20pan%20continuously%20during%20the%20cooking%20process.)%20Cover%20the%20stock%20and%20leave%20it%20on%20low%20at%20a%20simmer%20(it%20will%20need%20to%20stay%20hot%20the%20entire%20time%20you're%20cooking%20the%20risotto.)%3C/p%3E%3Cp%3E3.%20In%20a%20large,%20heavy%20bottomed%20pan%20(there%20are%20special%20risotto%20pans%20but%20although%20nice,%20they're%20not%20necessary)%20melt%20the%20butter%20and%20cook%20the%20onion%20on%20medium-low%20heat%20until%20softened,%20about%205%20minutes.%3C/p%3E%3Cp%3E4.%20Add%20the%20rice%20and%20stir%20to%20coat%20all%20the%20grains%20with%20butter.%20Saut%C3%A9e%20the%20rice%20for%202-3%20minutes%20until%20the%20rice%20becomes%20chalky%20and%20you%20can%20see%20a%20white%20dot%20in%20the%20center%20of%20each%20grain.%20Then%20add%20the%20wine%20and%20cook%20for%202%20minutes,%20stirring,%20until%20it's%20been%20absorbed.%3C/p%3E%3Cp%3E5.%20Now%20the%20fun%20begins%20(by%20the%20end%20of%20this,%20your%20arm%20will%20be%20very%20tired!)%20Add%20one%20cup%20of%20the%20hot%20stock%20to%20the%20pan%20and%20stir%20until%20it%20has%20all%20been%20absorbed%20by%20the%20rice%20-%20if%20you%20don't%20stir%20and%20cook%20until%20the%20liquid%20is%20absorbed%20with%20each%20addition,%20the%20rice%20will%20get%20very%20gummy).%3C/p%3E%3Cp%3E6.%20Continue%20to%20add%20stock,%20one%20cup%20at%20a%20time,%20stirring%20constantly%20until%20the%20rice%20has%20absorbed%20the%20liquid%20and%20starts%20to%20seem%20dry%20before%20adding%20more%20stock.%20Once%20you've%20added%206%20cups%20of%20the%20stock,%20you%20should%20start%20adding%201/2%20cup%20at%20a%20time.%20Keep%20doing%20this%20until%20the%20rice%20is%20cooked%20through%20but%20still%20a%20little%20al%20dente,%20about%2030%20minutes%20total%20(you%20may%20not%20end%20up%20using%20all%20of%20the%20stock%20but%20it%20should%20be%20pretty%20close%20--%20if%20you%20run%20out%20of%20stock,%20you%20can%20substitute%20hot%20water%20towards%20the%20end.)%3C/p%3E%3Cp%3E8.%20Turn%20off%20the%20heat,%20add%20the%20chopped%20ramp%20greens,%20lemon%20zest,%20and%20Parmesan%20cheese,%20mix%20well%20to%20incorporate,%20then%20season%20with%20salt%20(if%20needed)%20and%20freshly%20ground%20black%20pepper,%20and%20serve.%3C/p%3E){kind=link}
