%20all%20is%20well.%3C/p%3E%3Cp%3EThis%20month%20I%20got%20to%20peruse%20the%20recipes%20at%20Food%20Ramblings.%3C/p%3E%3Cp%3EThis%20is%20actually%20the%20second%20recipe%20I%20tried%20from%20Elizabeth%E2%80%99s%20site.%20The%20first,%20White%20Wine%20Chicken%20with%20Honey%20Glaze,%20was%20excellent.%3C/p%3E%3Cp%3EHowever,%20since%20we%20cook%20on%20the%20grill%20in%20summer%20the%20photos%20were%20horrid.%3C/p%3E%3Cp%3EOkay,%20it%20was%20not%20the%20fault%20of%20the%20photographer.%20It%20wasn%E2%80%99t%20really%20the%20fault%20of%20the%20cook,%20either.%20It%20was%20a%20combination%20of%20honey%20in%20the%20glaze,%20which%20tends%20to%20burn,%20and%20our%20old,%20malfunctioning%20gas%20grill%20which%20has%20been%20smoking%20up%20a%20storm%20lately.%3C/p%3E%3Cp%3EThe%20result%20was%20that%20the%20chicken%20was%20black%20in%20places%20(many%20places).%20It%20wasn%E2%80%99t%20burned,%20and%20the%20smoke%20really%20doesn%E2%80%99t%20impart%20much%20flavor,%20but%20it%20was%20not,%20um,%20photogenic.%3C/p%3E%3Cp%3EMon%20mari%20replaced%20the%20lava%20rocks%20this%20year,%20after%20much%20searching%20to%20even%20find%20them.%20They%E2%80%99ve%20been%20sending%20up%20smoke%20all%20summer.%20(He%E2%80%99s%20replaced%20them%20twice%20this%20summer,%20trying%20to%20solve%20the%20problem.)%3C/p%3E%3Cp%3ENext%20summer%20we%20replace%20the%20grill.%3C/p%3E%3Cp%3ESo,%20I%20scrapped%20the%20chicken%20pics%20and%20went%20in%20search%20of%20another%20recipe.%3C/p%3E%3Cp%3EI%20found%20this%20recipe%20for%20Zucchini%20Fritters%20and,%20by%20sheer%20coincidence,%20I%20just%20happened%20to%20have%20a%20zucchini%20in%20my%20garden.%3C/p%3E%3Cp%3EZucchini%20Fritters%3C/p%3E%3Cp%3ETotal%20time:%2025%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EIn%20medium%20bowl%20lightly%20beat%20egg.%3C/p%3E%3Cp%3EAdd%20flour,,%20baking%20powder,%20and%20spices.%20%20Mix%20well.%3C/p%3E%3Cp%3EAdd%20zucchini,%20onions,%20parsley,%20and%20mix%20well.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20large%20nonstick%20skillet%20over%20medium%20heat.%3C/p%3E%3Cp%3EDivide%20mixture%20into%204ths%20and%20spoon%20each%204th%20into%20pan,%20shaping%20into%20patty%20and%20patting%20down%20lightly.%3C/p%3E%3Cp%3ESaut%C3%A9%205%20%E2%80%93%2010%20minutes,%20or%20until%20brown,%20then%20turn%20and%20fry%20other%20side%20the%20same.%3C/p%3E%3Cp%3EWhen%20brown,%20remove%20and%20serve.%3C/p%3E%3Cp%3EA%20little%20freshly%20ground%20pepper%20and%20sea%20salt%20on%20top%20is%20a%20nice%20touch.%3C/p%3E%3Cp%3EI%20made%20a%20few%20changes,%20of%20course%E2%80%A6.%3C/p%3E%3Cp%3EI%20didn%E2%80%99t%20salt%20and%20drain%20the%20zucchini%20%E2%80%93%20because%20I%20can%E2%80%99t%20be%20bothered%20to%20spend%2015%20minutes%20to%20do%20it.%3C/p%3E%3Cp%3EI%20didn%E2%80%99t%20deep-fry%20them%20as%20one%20should%20do%20for%20a%20proper%20fritter%20%E2%80%93%20because%20I%20don%E2%80%99t%20deep-fry%20stuff.%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20vegetables%20patties%20before,%20but%20not%20using%20flour%20(I%20usually%20use%20breadcrumbs)%20and%20never%20with%20the%20addition%20of%20baking%20powder.%20These%20were%20lighter%20in%20texture,%20very%20tender.%3C/p%3E%3Cp%3EWe%20were%20most%20pleased.%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20them%20again%E2%80%A6.%20and%20again.%3C/p%3E%3Cp%3EAlways%20good%20to%20find%20another%20zucchini%20recipe%20this%20time%20of%20year.%3C/p%3E%3Cp%3ELast%20update%20on%20September%206,%202015%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
