Receta Zucchini & Summer Squash Soup
A Delicious,Creamy' Healthy Soup made with the Summer Garden's Abundance!!!
Ingredientes
- 3 Zucchini
- 3 Summer squash
- 1 large onion
- 1 green pepper
- 3 stalks of celery
- 2 Cloves Garlic
- 4 cups chicken or Vegetable stock
- 1 can of creamed corn">corn or fresh corn">corn blended
- 2 Tbls Butter
- Fresh thyme to taste
- season salt to taste
- pepper to taste
- 1 1/2 Cups shredded Pepper Jack or you favorite Cheese
Direcciones
- Fine dice onion,celery,green pepper and Garlic
- Saute in butter until translucent
- Dice squash add to the pot
- Add remaining ingredients except cheese cook till done
- Puree soup with an immersion blender
- Stir in Cheese and enjoy!!!
