%3C/p%3E%3Cp%3EBresaola%20with%20Arugua%20and%20Parmigiano-Reggiano%3C/p%3E%3Cp%3EThe%20first%20Saturday%20of%20December%20found%20Michael%20and%20I%20out%20and%20about%20on%20a%20very%20brisk%20day%20to%20escort%20my%20parents%20around%20Midtown;%20they%20had%20boarded%20a%20bus%20to%20New%20York%20around%207:30%20that%20morning%20from%20PA,%20and%20emerged%20from%20the%20Lincoln%20Tunnel%20about%20two%20hours%20later,%20so%20we%20ended%20up%20escorting%20them%20around%20Midtown%20for%20a%20good%20seven%20hours%20(notable%20to%20us%20only%20when%20we%20realized%20that%20we%20spent%206%20of%20those%20hours%20walking).%20Once%20we%20had%20gotten%20them%20on%20their%20tour%20bus%20home%20(a%20surprisingly%20harrowing%20ordeal%20thanks%20to%20there%20being%20at%20least%2030%20buses%20all%20jockeying%20for%20a%20spot%20along%2042nd%20Street%20at%20Bryant%20Park)%20we%20made%20our%20way%20home,%20stopping%20for%20a%20quick%20drink%20to%20discuss%20the%20evening%E2%80%99s%20plans%20that%20left%20me%20feeling%20torn%20on%20whether%20to%20bundle%20back%20up%20and%20accompany%20Michael%20to%20the%20Village%20for%20a%20party%20or%20to%20stay%20home.%20I%20was%20tired%20but%20I%20felt%20bad%20after%20saying%20I%20would%20go%20with%20him,%20and%20as%20the%20exhaustion%20from%20the%20exertions%20of%20the%20day%20set%20in,%20I%E2%80%99m%20pretty%20sure%20that%20it%20crossed%20a%20wire%20or%20two%20in%20my%20head%20because%20I%20got%20a%20little%20irrationally%20angry%20at%20the%20choice%20of%20either%20having%20to%20stay%20home%20alone%20or%20schlepping%20it%20down%20to%20the%20subway%20again.%20In%20any%20case,%20I%20wisely%20chose%20to%20stay%20indoors%20and%20sent%20Michael%20on%20his%20then-grumpy%20way,%20resigning%20myself%20to%20an%20evening%20of%20some%20of%20my%20favorite%20DVDs%20and%20the%20Wii,%20promptly%20remembering%20that%20I%20actually%20enjoy%20having%20nights%20to%20myself%20from%20time%20to%20time.%3C/p%3E%3Cp%3EWell,%20in%20the%20midst%20of%20all%20of%20this%20(very%20silly)%20drama%20I%20had%20my%20first%20taste%20of%20bresaola%E2%80%93air-dried,salted,%20lean%20beef%20from%20the%20Lombardy%20region%20of%20Italy%E2%80%93in%20the%20form%20of%20what%20could%20be%20the%20most%20perfect%20meat-and-cheese%20sandwich%20ever:%20bresaola%20and%20goat%20cheese%20between%20two%20slices%20of%20toasted%20bread.%20That%E2%80%99s%20it.%3C/p%3E%3Cp%3EYou%20see,%20we%20finally%20decided%20to%20finally%20try%20Panino%20Sportivo%20for%20dinner%20(it%E2%80%99s%20on%20our%20block%20but%20sometimes%20keeps%20rather%20inconvenient%20hours)%20and%20I%20took%20a%20chance%20on%20that%20sandwich%20and%20the%20tomato%20soup%20I%20got%20to%20go%20with%20it,%20and%20if%20there%20was%20ever%20a%20cure%20for%20a%20rotten%20mood,%20well,%20that%20sandwich%20fits%20the%20bill%20nicely.%20The%20whirl%20of%20the%20holidays%20made%20me%20forget%20about%20how%20good%20that%20sandwich%20(and%20bresaola)%20were%20until%20I%20cracked%20open%20our%20new%20Rome%20cookbook%20and%20saw%20paper-thin%20slices%20of%20it%20beautifully%20arranged%20on%20a%20plate%20carpaccio-style,%20topped%20with%20arugula%20and%20shards%20of%20Parmigiano-Reggiano.%20And%20that%E2%80%99s%20basically%20what%20you%20do:%20for%20each%20serving,%20lay%20four%20slices%20of%20bresaola%20onto%20a%20white%20serving%20plate%20(the%20better%20to%20see%20the%20beautiful%20colors%20with,%20my%20dear)%20and%20arrange%20a%20small%20clump%20of%20arugula%20in%20the%20middle%20of%20the%20plate%20and%20dress%20with%20a%20little%20(good%20if%20you%E2%80%99ve%20got%20it)%20olive%20oil,%20salt,%20pepper,%20shards%20of%20Parmigiano-Reggiano%20(made%20from%20using%20a%20vegetable%20peeler)%20and%20a%20splash%20of%20lemon%20(we%20used%20Meyers).%3C/p%3E%3Cp%3EIt%E2%80%99s%20the%20perfect%20carpaccio-style%20antipasti%20to%20enjoy%20with%20no%20fretting%20over%20the%20relative%20freshness%20of%20the%20beef%20used,all%20while%20lending%20a%20festive%20presentation.%20All%20that%20said%E2%80%93on%20to%20the%20pesto.%3C/p%3E%3Cp%3EPistachio-Parsley%20Pesto%20with%20Red%20and%20Yellow%20Peppers%20over%20Capellini%3C/p%3E%3Cp%3EI%20made%20this%20dish%20by%20myself%20nearly%20a%20year%20ago%20when%20Michael%20was%20visiting%20family%20and%20I%20was%20in%20search%20of%20fun%20cooking%20projects%20that%20would%20yield%20a%20good%20amount%20of%20leftovers,%20but%20since%20this%20was%20a%20recipe%20(courtesy%20of%20Giada)%20that%20had%20walnuts,%20I%20knew%20that%20if%20I%20ever%20had%20a%20chance%20of%20making%20it%20for%20Michael,%20I%E2%80%99d%20have%20to%20switch%20it%20up%20a%20bit,%20as%20he%20hates%20walnuts%20in%20very%20large%20quantities.%20So%20I%20did%E2%80%93we%20had%20a%20bag%20of%20unshelled%20pistachios%20in%20the%20freezer%20and%20given%20that%20they%20are%20very%20high%20in%20good%20nutrients%20and%20we%20needed%20a%20reason%20to%20use%20them,%20we%20spent%20a%20good%20thirty%20minutes%20(sacrificing%20a%20portion%20of%20a%20thumbnail%20on%20my%20part)%20shelling%20the%20roasted%20beauties%20and%20then%20throwing%20them%20into%20a%20blender%20with%20parsley,%20thyme,%20garlic%20and%20olive%20oil,%20and%20then%20tossing%20that%20sauce%20with%20capellini,%20some%20gently%20saut%C3%A9ed%20vegetables%20and%20some%20asiago.%3C/p%3E%3Cp%3EI%20was%20a%20bit%20trepidatious%20when%20Michael%20tried%20it%20as%20he%20can%20be%20a%20bit%20of%20a%20snob%20when%20it%20comes%20to%20pasta%20dishes,%20but%20him%20wolfing%20it%20down%20signified%20a%20big%20victory%20for%20yours%20truly.%3C/p%3E%3Cp%3EMake%20the%20pesto:%20combine%20the%20whole%20garlic%20cloves,%20pistachios,%20parsley,%20thyme%20and%20process%20in%20a%20food%20processor%20or%20stand%20mixer,%20drizzling%20the%201/2%20cup%20of%20olive%20oil%20to%20help%20combine;%20season%20with%20salt%20and%20pepper%20to%20taste.%20Set%20aside.%3C/p%3E%3Cp%3EBring%204%20quarts%20of%20water%20to%20a%20boil,%20season%20well%20with%20salt%20and%20cook%20the%20capellini%20until%20al%20dente,%20about%202%20minutes%20depending%20on%20package%20directions.%3C/p%3E%3Cp%3EIn%20a%20large%20saute%20pan,%20heat%20the%203%20T%20of%20olive%20oil%20over%20medium%20high%20heat;%20add%20the%20peppers,%20chopped%20garlic%20and%20%20season%20with%20salt,%20and%20saute%20until%20tender-crisp,%20about%20five%20minutes.%20Add%20the%20pesto,%20cheese%20and%20pasta%20to%20the%20pepper/leek%20mixture%20and%20toss%20well%20to%20coat;%20place%20pasta%20into%20individual%20dishes%20or%20a%20large%20serving%20bowl%20and%20serve%20immediately.%3C/p%3E){kind=link}
