  • 200 gm caster sugar

  1. Grease and line two 450g loaf tins with greased greaseproof paper.
  2. Measure all the ingredients into a bowl and beat till smooth.
  3. Spoon half of the mix into each tin.
  4. Stand the tins on the grill rack in the lowest position in the large roasting tin.
  5. Slide on to the lowest set of runners in the roasting oven with the cool plain shelf on the second set of runners.
  6. Bake for about 45 min turning halfway through if necessary till pale golden brown and a skewer comes out clean when inserted.

  9. If the cakes are too brown slide in the cool plain shelf on the second set of runners.
  10. Cold in the tins before removing.
  11. Serve hot or possibly cool.
  12. This is an excellent way of using slightly over ripe bananas the ones which sit in the fruit bowl and everyone avoids! This mix makes two fairly shallow loaf cakes. It is very similar to butter almond cake but with the flavour of bananas instead o f almonds.
