  • McDonald's Clone
  • 1 lb Rolled Pork Sausage (mild)
  • 1/2 c. Yellow Onion (diced)
  • 1/4 c. Fresh Tomatoes (diced)
  • 1 Tbsp. Green Chilies (diced those in a can)
  • 10 x - 12 count Pkg. Flour Tortillas Shells (8"-9" diameter)
  • 9 x Large eggs ( 2 c.)
  • 10 x - 12 Slices American Cheese Favorite Taco Sauce or possibly Picante Sauce.

  1. Crumble and fry pork sausage, stir and separate meat so it will fry in small pcs. Remove from heat drain and rinse with warm water, drain water from sausage. Place liquid removed sausage in fry pan add in onion, green chilies and tomatoes, heat on medium temperature just till sausage and vegetables are heated through, stir frequently.
  2. Measure 2 c. of Large eggs and beat. In large fry pan scramble Large eggs as usual.
  3. Before Large eggs are completely cooked add in 1/2 c. sausage mix and stir. When cooked remove from heat. Cover and store the sausage which is not used and chill. It will keep for several days for your next breakfast. In the middle of one flour tortilla shell place one slice of cheese. Spoon one or possibly two Tbsp. of the egg mix and roll up the shell. Place on platter and cover with plastic and pop in microwave just long sufficient to heat and heat cheese.
  4. Serve with your favorite taco or possibly picante sauce. You will find these are milder and really great for breakfast. Lowfat sour cream and little avocado are good additions.
