%3C/p%3E%3Cp%3EI%20didn't%20have%20chicken%20breasts,%20but%20I%20did%20have%20chicken%20tenders%20and%20so%20I%20used%20them%20instead.%20I%20just%20popped%20them%20into%20a%20plastic%20baggie%20and%20pounded%20them%20a%20bit%20with%20the%20bottom%20of%20the%20vinegar%20bottle,%20so%20that%20they%20were%20of%20an%20even%20thickness%20throughout.%3C/p%3E%3Cp%3EI%20had%20some%20Louisanna%20Hot%20Sauce%20that%20someone%20had%20gifted%20me%20with,%20so%20I%20used%20that,%20but%20you%20can%20use%20Tabasco%20or%20any%20other%20hot%20sauce%20you%20may%20have.%20(Taste%20it%20first%20to%20see%20how%20hot%20it%20is%20and%20adjust%20accordingly.)%20I%20also%20sprinkled%20mine%20with%20some%20paprika%20for%20colour,%20and%20seasoned%20it%20lightly%20with%20some%20fine%20sea%20salt.%20(I%20am%20trying%20to%20break%20the%20salt%20habit,%20but%20it's%20hard!)%3C/p%3E%3Cp%3EEllie%20called%20for%20grating%20the%20carrot,%20but%20I%20thought%20cutting%20the%20carrot%20into%20ribbons%20with%20a%20vegetable%20peeler%20was%20much%20prettier%20and%20gave%20a%20nice%20texture%20to%20the%20dish.%20As%20well,%20I%20used%20a%20baby%20gem%20lettuce,%20broken%20into%20leaves%20as%20I%20had%20cut%20the%20salad%20ingredients%20back%20to%20feed%20only%20one.%20(My%20man%20is%20not%20a%20salad%20man%20per%20se.%20Salad%20for%20lunch.%20He's%20just%20not%20going%20there!)%3C/p%3E%3Cp%3EThe%20real%20winner%20here%20is%20that%20luciously%20rich%20salad%20dressing.%20It's%20hard%20to%20believe%20that%20it%20is%20low%20fat!%20It's%20creamy%20and%20just%20wonderful%20and%20full%20of%20flavour.%20I%20used%20Danish%20Blue%20Cheese%20and%20it's%20just%20marvelous%20how%20much%20flavour%20just%20a%20little%20blue%20cheese%20can%20add!!%3C/p%3E%3Cp%3EAll%20in%20all%20I%20gave%20this%20salad%20a%20rousing%2010%20out%20of%2010,%20for%20ease,%20for%20presentation%20and%20for%20taste!%20Just%20call%20me%20one%20very%20happy%20camper!%20Low%20fat%20and%20low%20calorie%20doesn't%20have%20to%20equate%20with%20low%20taste.%3C/p%3E%3Cp%3E*Buffalo%20Chicken%20Salad*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EA%20delicious%20chicken%20salad%20with%20crisp%20vegetables,%20spicy%20chicken%20tenders%20and%20a%20fabulous%20low%20fat%20blue%20cheese%20dressing!%3C/p%3E%3Cp%3EFor%20the%20salad:%3C/p%3E%3Cp%3EWhisk%20the%20yoghurt,%20buttermilk,%20mayonnaise%20and%20vinegar%20together%20until%20smooth.%20Whisk%20in%20the%20sugar%20until%20it%20dissolves.%20Stir%20in%20the%20crumbled%20blue%20cheese%20and%20season%20to%20taste.%20Cover%20and%20refrigerate%20any%20leftovers.%3C/p%3E%3Cp%3EAnd%20in%20The%20Cottage%20today,%20Bread%20Bowl%20Meatball%20Sandwiches.%3C/p%3E){kind=link}
